HG'S SWEET 'N CHUNKY CHICKEN SALAD - WW POINTS = 3
Hot Chick! Dozens of fat grams in chicken salad = bad news. Crunchy cucumbers, red grapes, and yogurt dressing on the other hand = GREAT additions. Here's HG's guilt-free answer to the notoriously fattening Waldorf chicken salad... HG Tip! If cooking your chicken from scratch, use nonstick spray (not oil) to keep the fat count down. **These short, sweet cucumbers rule in this recipe! But if you can't find 'em, any cucumber will do. HG'S SOUTHWESTERN SURPRISE - WW POINTS = 3
I recently purchased the new Hungry Girl Cookbook and this is one of the first recipes that I am going to try. Here is what the book says: "Not to sound like a cheesy commercial, but this soup is so thick, it "eats like a meal." It's almost too easy to prepare a super-sized batch, and it tastes even better the next day! (HG Tip: Freeze leftovers in individual servings for microwavable, super-filling, guilt-free snacks)." UPDATE NOTE 9/7/2008: I made this recipe today for dinner but I made just a couple changes: 1) I used 16 ounces Perdue Ground Chicken (hubby wanted more meat!) and 2) I cooked it all in my crockpot on Low for about 8 hours. Hubby and I had it for dinner and it was awesome! I posted a picture also. The change to the ground chicken changed the points value to 4 points per generous 1 cup serving. I hope you all enjoy as much as we did!

CHUNKY CHICKEN SALAD
Simple to prepare chicken salad that I make up for sandwiches. We never have left-over chicken, so I microwave chicken just to make this. Very basic but very good! P.S. Celery is listed as optional because my husband hates it...if I am only making this for him, I leave it out! :)

Steps:
- In a medium bowl, combine mayo, onions, relish and 2 dashes or so of paprika.
- Add chicken and fold into mayo mixture until well combined.
- Taste and then add salt and pepper as needed.
- Chill well and serve over lettuce or on your favorite bread.
- Note: I microwave 2 boneless chicken breast halves sprinkled with salt, pepper, Italian seasoning, garlic powder and onion powder for 5- 6 minutes for this salad.
- If you are using left-over chicken, you may need to adjust the seasonings in the ingredients list.
Tips:
- For the best flavor, use high-quality ingredients. Look for fresh, organic vegetables and fruits, and free-range, antibiotic-free chicken.
- Don't be afraid to experiment with different flavors. Add some diced red onion or celery to the chicken salad for a bit of crunch, or try adding a dollop of Dijon mustard or a splash of hot sauce for a bit of spice.
- Make sure to chill the chicken salad for at least 30 minutes before serving. This will help the flavors to meld and will make the salad more refreshing.
- Serve the chicken salad on a bed of fresh greens, or use it as a sandwich filling or wrap.
Conclusion:
This HGS Sweet 'n Chunky Chicken Salad is a delicious and healthy option for lunch or dinner. It's packed with protein, fiber, and healthy fats, and it's low in calories and Weight Watchers points. Whether you're looking for a quick and easy meal or a satisfying and nutritious snack, this chicken salad is sure to please.
