HIGHBUSH CRANBERRY JELLY

Highbush Cranberry Jelly image

High bush cranberries are not true cranberries, they are a shrubby plant with clusters of red berries that are quite acidic. This jelly is superb on toast, English muffins, with cream cheese or is also good with meat, poultry or fish. Please note that these berries smell like horrid stinky socks when the juice is being extracted from them, I like a well ventilated kitchen for this step. I also freeze the extracted juice before I make the jelly. It's convenient and it also seems to mellow the flavour.

Tips:

  • Choose ripe cranberries: Look for firm, plump cranberries that are deep red in color. Avoid any cranberries that are soft, bruised, or have any signs of mold.
  • Prepare the cranberries: Rinse the cranberries thoroughly under cold water. Remove any stems or leaves.
  • Use a food processor or blender: If you don't have a food mill, you can use a food processor or blender to puree the cranberries. Be sure to pulse the cranberries in short bursts to avoid over-processing.
  • Add sugar and Certo: Stir the sugar and Certo into the cranberry puree until well combined. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low and simmer for 1 minute, or until the jelly reaches a thickened consistency.
  • Test the jelly: To test the jelly, spoon a small amount onto a cold plate. Let it cool for a few minutes. If the jelly wrinkles when you push your finger against it, it is ready. If it is still too runny, continue to simmer for a few more minutes.
  • Canning the jelly: If you want to can the jelly, follow the instructions in the recipe carefully. Be sure to sterilize the jars and lids before filling them with jelly.

Conclusion:

Highbush cranberry jelly is a delicious and versatile spread that can be enjoyed in many different ways. It can be spread on toast, crackers, or muffins. It can also be used as a topping for ice cream, yogurt, or pancakes. And it can even be used as a glaze for ham or chicken.
