8 soft hoagie buns (6 to 7 inch), split
3/4 cup creamy Dijon mustard-mayonnaise spread
8 slices (1 3/4 oz each) provolone or mozzarella cheese, each cut into 4 pieces
1/2 lb thinly sliced salami or summer sausage
1 lb thinly sliced cooked turkey or chicken
1 medium green bell pepper, cut into thin bite-size strips

Steps:

  • Heat gas or charcoal grill. Cut 8 (12x12-inch) sheets of heavy-duty foil. Spread cut sides of buns with mustard-mayonnaise spread.
  • On bottom halves of buns, layer cheese, salami, turkey and bell pepper. Cover with top halves of buns. Place sandwiches on foil. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • Place packets on grill. Cover grill; cook over medium heat 8 to 10 minutes or until thoroughly heated. Carefully open packets to allow steam to escape.

1 Japanese eggplant sliced on an angle in half-inch thick slices
1 small zucchini sliced on an angle in half-inch thick slices
1 red pepper cut in quarters lengthwise
1 small red onion cut into 4 slices
2 portobello mushroom caps
1/2 cup extra-virgin olive oil
Salt and pepper
8 slices crusty peasant style bread cut 1/2-inch thick
4 pieces red leaf lettuce
Herbed Mayonnaise, recipe follows
3/4 cup mayonnaise
1/2 lemon, juiced
A few drop hot sauce
1 garlic clove, crushed and skin removed
2 tablespoons thyme leaves
2 tablespoons flat-leaf parsley leaves
2 tablespoons chopped chives

Steps:

  • Using a pastry brush, brush olive oil on the vegetable slices and the portobello mushrooms. Season them with salt and pepper. Place vegetables on a hot grill and cook until they are tender. Once vegetables are done brush sliced bread with olive oil and grill on both sides. To assemble, slice portobellos into 1/4-inch slices, spread both sides of the grilled bread with Herbed Mayonnaise and then top with 1 slice each of grilled vegetables and a quarter of the mushrooms, and finish off with lettuce and top with remaining piece of bread.
  • Combine all ingredients in a food processor and pulse.

1 tablespoon dried oregano
1 tablespoon olive oil
4 hoagie rolls
1/4 lb prosciutto di Parma, thinly sliced
1/4 lb capicola, thinly sliced
1/4 lb genoa salami or 1/4 lb soprassata salami, thinly sliced
1/4 lb provolone cheese
1 large tomatoes, thinly sliced
1 small onion, thinly sliced

1 large green pepper, thinly sliced
1 small onion, thinly sliced and separated into rings
1/2 teaspoon olive oil
1 loaf (1 pound) unsliced Italian bread
1/3 cup prepared Italian salad dressing, divided
2 ounces sliced deli turkey
4 slices Swiss cheese
2 ounces sliced deli ham
3 slices cheddar cheese
2 ounces sliced deli pastrami

1 large tomato, thinly sliced

Steps:

  • In a large bowl, toss green pepper and onion with oil. Place on a double thickness of heavy-duty foil (about 12 in. square). Fold foil around vegetables and seal tightly. Grill, covered, over medium-hot heat for 12-15 minutes or until tender; set aside., Cut loaf in half horizontally; remove bread from top half, leaving a 1/2-in. shell (discard removed bread or save for another use). 3 Fresno chilies, stemmed, seeded and diced small
3 cloves garlic, minced
2 jalapeno peppers, stemmed, seeded and diced small

1/2 cup honey
1 tablespoon mustard seeds

Steps:

  • For the pepper relish: Heat the olive oil in a large skillet over medium heat. When the oil is hot, add the Fresno chiles, garlic, jalapenos, bell peppers and onion and sauté for to 4 minutes to soften. Add the vinegar, honey and mustard seeds.
