I love making this when there is a large family gathering. Instead of many pots & pans it only takes 2. Possibly 3 if you want to smother it in peppered cream gravy! You can make this in a large skillet but I prefer a griddle, easier to turn when it's time. As far as meats or vegetables go its made with what you like & the amount is up to you! 10 boiled grated potatoes
5 eggs, beaten
1 cup cooked meat
1/2 cup bell peppers or 1/2 cup mushroom, etc.combine
1 cup grated cheddar cheese (it's what you like) or 1 cup monterey jack cheese, etc. (it's what you like)
2 cups of peppered country cream gravy (optional)

Steps:

  • oil griddle & get hot,.
  • put enough hash browns down to cover griddle. As hash browns are getting golden crisp I then place on top of browns my cooked meat & vegetables then my beaten eggs, place a lid over it until egg is set.
  • cut into serving size squares and flip, place lid back on & cook until egg is cooked all the way through.
  • Top with cheese until melted. We enjoy this served up with peppered cream gravy.
  • variation= with vegetables add green chili's & when done serve it with your favorite salsa.

1 lb lean ground beef
1 small onion
2 medium sliced potatoes
4 slice american cheese
1 can(s) cream of mushroom soup
1/8 c milk
1 1/2 c french fried onions

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Pat ground beef into 8x8 pan and sprinkle with salt and pepper. If using, slice onion on top of beef. Slice potatoes onto onion layer, salt and pepper. Layer with cheese slices. Mix soup and milk together and spread over cheese.
  • 3. Cover with aluminum foil and bake for 1 to 1 1/2 hours or until potatoes are tender. Remove foil and top with french fried onions and brown for about 5 minutes.

10 lbs potatoes, cut into 1 inch cubes
3 lbs ground beef
6 -8 medium carrots, diced
1 (10 ounce) bottle Worcestershire sauce (approx. 1 1/4 cups)
1 large onion, chopped
1 head garlic, peeled and chopped fine
3 (26 ounce) cans undiluted cream of mushroom soup
4 cups milk
salt, to taste (I use approximately 1 tablespoon)
pepper, to taste (I use approximately 1 teaspoon)

Steps:

  • Preheat oven to 400°F.
  • Spray 4 9x13-inch baking pans with non-stick cooking spray (such as Pam); set aside.
  • Combine ground beef, onion, and garlic in large skillet.
  • Cook over medium-high heat until ground beef is browned.
  • Drain.
  • Add Worcestershire sauce, cream of mushroom soup, and milk.
  • Stir until sauce is fairly smooth.
  • Boil potatoes until tender; drain. Add potatoes and carrots to sauce.
  • Divide mixture evenly between the 4 baking pans.
  • To bake: Cover baking pan with foil and bake for 30 minutes.
  • Remove foil and bake an additional 15-20 minutes or until potatoes are tender.
