This is a wonderful fresh uncooked cranberry salad I've enjoyed since I was a child. It has a dressing made with Miracle Whip®, Cool Whip®, and cream cheese. It sounds kind of strange but it really complements the salad.

1 tablespoon creamy salad dressing (such as Miracle Whip®), or as needed
2 oranges
1 (12 ounce) bag fresh cranberries
2 apples, unpeeled and cored
2 ½ cups boiling water, or as needed
1 (.25 ounce) package unflavored gelatin (such as Knox ®)
½ cup cold water
1 (6 ounce) package raspberry-flavored gelatin mix (such as Jell-O®)
2 cups white sugar
2 cups halved seedless grapes
2 cups chopped pecans
1 ½ cups frozen whipped topping (such as Cool Whip®), thawed
1 (8 ounce) package cream cheese, softened
3 tablespoons creamy salad dressing (such as Miracle Whip®)
2 teaspoons white sugar
1 sprig fresh parsley

Steps:

  • Grease a ring mold with 1 tablespoon creamy salad dressing. Zest 1 orange and then peel both oranges.
  • Place oranges, orange zest, cranberries, and apples together in the bowl of a food processor; pulse until coarsely chopped. Strain fruit pieces, reserving juice in a quart-size measuring cup. Add enough boiling water to measure 3 cups liquid.
  • Dissolve unflavored gelatin in cold water in a large bowl. Pour water-juice mixture over unflavored gelatin. Add raspberry gelatin and 2 cups sugar; stir to dissolve completely. Stir in fruit mixture, grapes, and pecans. Pour gelatin mixture into prepared ring mold; chill 8 hours to overnight.
  • Mix whipped topping, cream cheese, 3 tablespoons creamy salad dressing, and 2 teaspoons sugar together in a bowl until dressing is smooth.
  • Dip chilled mold in a few inches of hot water to loosen gelatin from mold. Turn out onto a serving platter, garnish with parsley, and serve with dressing.

2 cups boiling water, divided
1 can (14 ounces) whole-berry cranberry sauce
2 tablespoons lemon juice
1 cup heavy whipping cream
1 package (8 ounces) cream cheese, softened

Steps:

  • In a small bowl, dissolve gelatin in 1 cup boiling water. In another bowl, combine cranberry sauce and remaining water; add gelatin mixture and lemon juice. 1 can (20 oz) crushed pineapple, undrained
2 packages (3 oz) or 1 package (6 ounce) raspberry flavored gelatin
1 can (14 oz) whole berry cranberry sauce
1 medium apple chopped (Any will do. We like honey crisp.)
2/3 cup chopped walnuts (optional - tastes great if you choose to use them)

Steps:

  • Open can of pineapple and drain pineapple, reserving juice. Pour juice into a 4 cup liquid measuring dish.
  • Remove 1 Tablespoon of the crushed pineapple and set aside for garnish {if desired}
  • Add enough cold water to pineapple juice until it measure 3 cups; pour int a large saucepan.
  • Bring juice to a boil then remove from heat immediately.
  • Add gelatin. Whisk mixture at least 2 minutes until completely dissolved.
  • Add cranberry sauce and stir. {Gelatin mixture should be thick}.
  • Pour mixture into a large bowl. Refrigerate 15 - 30 minutes or until slightly thickened.
  • Remove from fridge and stir in pineapple, apples and walnuts; stir gently.
  • Pour into a medium serving bowl. & refrigerate for 4 hours or until completely firm.
  • Top with reserved crushed pineapple just before serving.
  • Store leftover gelatin in refrigerator.

1 cup finely chopped celery
1 (16 ounce) package raw cranberries
1 orange, rind of
1 cup sugar
6 ounces raspberry Jell-O gelatin (orange or cranberry Jello will work, too)
2 cups boiling water
1 cup orange juice
1/2 cup chopped pecans or 1/2 cup chopped walnuts

Steps:

  • Bring water to a boil.
  • Add hot water to a med-large tempered bowl along with the orange juice and jello flavoring packets and disssolve thoroughly.
  • Chill until syrupy (30-40 mins)in a 9 x 9 or 9 X 13 dish (the only slight difference will be the depth of salad).
  • Chop celery finely in Food Processor, remove to a small dish and set aside.
  • Peel rind close to the zest.
  • Grind rind and cranberries in food processor until chopped ever so thinly (I remember when we chopped all by hand!).
  • Add sugar and mix with cranberry mixture. I stir right into food processor for one less dish.
  • When jello is syrupy, add cranberry mixture, nuts and finely chopped celery, mixing well in your dish.
  • Or you can transfer into a mold.
  • Refrigerate until firm (several hours).

1 (12 ounce) package fresh or frozen cranberries, coarsely chopped
1 (20 ounce) can crushed pineapple, with juice
2 cups white sugar
½ pint heavy whipping cream
1 cup chopped walnuts
2 cups miniature marshmallows

  • In a large bowl, stir together the cranberries, pineapple (with juice) and sugar. Let stand for about an hour, to let sugar dissolve, and then pour the mixture into a strainer over a bowl. Let drain, covered, in the refrigerator for at least two hours, or overnight. (Note: The drippings make a wonderful cranberry punch, when mixed with lemon-lime soda!)

We enjoy this during Thanksgiving and Christmas. Traditionally this is made with cherry Jell-O, however, to be a bit healthier I now make it with "no sugar added" fruit juice. Feel free to substitute cherry gelatin and water (made to package directions) in place of the unflavored gelatin and fruit juice. While many enjoy the addition of pecans, I omit due to personal preference. If you have young children, I recommend peeling the apple. If using an unpeeled apple, use a red apple for the best color.

1 (1/4 ounce) package unflavored gelatin (Knox brand)
1 cup cranberry-raspberry juice or 1 cup other red juice, chilled

  • Lightly brush 6 1/2-cup ring mold or 1 1/2-quart decorative bowl with vegetable oil.
