1 (12 ounce) carton whipped cream cheese, softened
8 ounces feta cheese, crumbled
1/4 cup thinly sliced green onion, just the green part
1 (6 ounce) package dried cranberries, craisins
1/3 cup chopped walnuts, chopped small
3 (10 inch) regular tortillas or 3 (10 inch) whole wheat tortillas
sliced green onion (to garnish)

Steps:

  • In small bowl, combine cream cheese, feta, walnuts and green onion.
  • Stir in craisins.
  • Evenly spread 1/3 of mixture onto each tortilla.
  • Roll up tightly and evenly, do not tear, though.
  • Make sure some of the spread is right to the end edge to seal.
  • Wrap each tightly in plastic wrap, refrigerate.
  • To serve, slice ends off, then slice into about 24 slices. More if sliced thinner. (About 8 slices per tortilla is what I got.).
  • Place on plate and sprinkle with more sliced green onion for garnish if desired.

Very popular with my family and guests---everyone really loves the great flavor combo of tangy chèvre cheese (or feta), sweet-tart cranberries, green onions, walnuts (or pistachios), and herbs. Easily made in advance, and I have frozen the logs (before slicing) with great results. Note: If you can't find chevre cheese, crumbled feta is equally good. 2 (8 ounce) packages cream cheese, very well softened
1 (5 1/2 ounce) package chevre herbed goat cheese (equally good with crumbled feta or plain chevre, with a pinch of Herbes de Provence or to taste)
1/2 cup finely chopped green onion
6 ounces dried sweetened cranberries (Craisins)
3/4 cup chopped walnuts or 3/4 cup unsalted pistachios
4 large flour tortillas
