GLAZED HOLIDAY HAM

Glazed Holiday Ham image

This is the ham that led directly to whatever childhood memory caused someone to combine ham and pineapple on a pizza. The sweet, slightly fiery and herbaceous crust on this salty haunch practically calls out for a garnish of caramelized pineapple, if not a spray of maraschino cherries. Others may reverse course and apply mustard. Either way, it is good to serve with a nutty wild rice or potatoes au grain, something with backbone.

Time 1h

Yield 10 to 12 servings

Number Of Ingredients 5

1 7-to-8-pound bone-in ham
Whole cloves
1½ teaspoons dry mustard powder
1 cup brown sugar
¼ cup dry sherry

Steps:

  • Heat oven to 325 degrees. Place the ham on a rack in a large roasting pan. Score the ham diagonally left to right, then right to left, to create a diamond pattern across the meat. Stud each diamond with a whole clove.
  • Add a cup or two of water to the bottom of the pan, then bake the ham, uncovered, 25 minutes to the pound if it is ready-to-cook, about half that if it is ready-to-eat.
  • Combine the mustard and the brown sugar in a bowl, then add the sherry to make a thick paste. Spread the mixture over the ham approximately 20 minutes before it is ready to remove from the oven, then bake until crust has formed.

Rita's Sweet Holiday Baked Ham image

This is my mom's holiday ham recipe. She would cook this easy recipe on my birthday. Made with maraschino cherries, sliced pineapples, brown sugar, honey and much more yummy ingredients. You'll love this ham dinner, and it's not just for the holidays, but great any time of year!

Provided by AMOREFATA1972

Categories     Main Dish Recipes     Pork     Ham     Whole

Time 2h20m

Yield 24

Number Of Ingredients 9

1 cup maple syrup
1 cup orange juice
1 cup ginger ale
½ cup brown sugar
½ cup honey
1 (10 ounce) jar maraschino cherries, halved
1 (12 pound) fully-cooked, bone-in ham
1 (15.25 ounce) can pineapple slices in juice, drained
1 box round wooden toothpicks

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the maple syrup, orange juice, ginger ale, brown sugar and honey. Stir in the juice from the maraschino cherries, and half of the cherries. Score the outer edge of the ham with a sharp knife in a diamond pattern. Cuts should be about 1/4 inch deep. This will allow the ham to soak up the juice.
  • Place the ham into an oven bag, and carefully pour the juice mixture over it, keeping all of the juice in the bag. It may look like there is too much juice, but the ham will soak it up while baking. Place the pineapples onto the top of the ham, and secure with toothpicks. Place cherries into the centers of the rings, and secure with toothpicks also. Tie the end of the bag closed with the ties provided, place in a large roasting pan, and cut a few small slits in the top of the oven bag.
  • Bake the ham for 2 hours in the preheated oven. The internal temperature should be 160 degrees F (80 degrees C) when done. Be sure not to touch the bone when taking the temperature. Remove ham from bag to a serving plate, and let stand for 10 minutes before carving.

PAULA DEEN'S OLD-FASHIONED HOLIDAY GLAZED HAM

Paula Deen's Old-Fashioned Holiday Glazed Ham image

This is a Paula Deen classic made with a spiral-sliced ham coated with a brown sugar/mustard glaze and then covered with pineapple rings, maraschine cherries and cloves. I found this in the December 2009 Food Network Magazine. Note: I am guessing on the size of the jar for the maraschino cherries. The recipe just calls for a small jar.

GLAZED HOLIDAY HAM

Glazed Holiday Ham image

Provided by Matt Lee And Ted Lee

Categories     dinner, main course

Time 2h15m

Yield half ham: 10 to 12 servings; whole ham: 24 to 26 servings

Number Of Ingredients 4

1 6- to 8-pound bone-in shank-half ham, or 15- to 17-pound bone-in whole ham, fully cooked
1 tablespoon whole cloves
Sour-cherry thyme glaze (see recipe)
or clementine peppercorn glaze (see recipe)

Steps:

  • Place rack in lower third of oven and preheat to 325 degrees. Trim tough rind from ham, leaving as much fat as possible. Place ham flat-side down and score the rounded side all over with diagonal cuts about 1 1/2 inches apart and 1/4-inch deep, forming a diamond pattern. In center of each diamond insert a single clove.
  • Place ham in a roasting pan and bake until a meat thermometer inserted into thickest part reads 135 degrees, about 15 minutes a pound. One hour before ham is done, remove it from oven and brush all over with glaze.
  • Return ham to oven and continue to bake, glazing ham once or twice more until ham is done. Remove ham from oven, tent with foil and let rest 10 minutes before carving.

Tips:

  • Choose the right ham: Select a fully cooked ham for easy preparation. Bone-in hams offer more flavor, while boneless hams are easier to carve.
  • Preheat the oven: Ensure your oven is preheated to the desired temperature before placing the ham inside. This helps the ham cook evenly.
  • Use a roasting pan: Place the ham in a roasting pan to catch the juices and prevent splattering. You can also add water or broth to the pan to keep the ham moist.
  • Cover the ham: Cover the ham with foil during baking to retain moisture and prevent the glaze from burning.
  • Baste the ham: Basting the ham with the glaze throughout the cooking process helps keep it moist and adds flavor.
  • Use a meat thermometer: To ensure the ham is cooked to the proper internal temperature, insert a meat thermometer into the thickest part of the ham. The safe internal temperature for ham is 140°F (60°C).
  • Let the ham rest: Once the ham is cooked, let it rest for 15-20 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful ham.

Conclusion:

Holiday Glazed Baked Ham is a versatile and delicious dish perfect for special occasions. With its crispy, flavorful glaze and tender, juicy meat, this ham is sure to be a hit among family and friends. Whether you prefer a classic glaze or something more adventurous, there are endless possibilities to customize your ham to suit your taste. So, gather your ingredients, preheat your oven, and get ready to create a memorable holiday meal that everyone will love.
