Time 20m

Yield 6-10 serving(s)

Number Of Ingredients 8

6 cinnamon sticks
16 whole cloves
1 teaspoon allspice
2 (6 ounce) cans frozen apple juice concentrate
2 cups cranberry juice
1/4 cup sugar
1 teaspoon bitters
1/4 cup rum

Steps:

  • Place the cinnamon sticks, cloves, and allspice in the center of a large paper coffee filter. Fold the ends over and roll up burrito-style. Tie closed with dental floss or thread, leaving long ends.
  • Mix apple juice concentrate with water as directed on can (you should end up with 6 cups of juice).
  • In a saucepan combine apple juice, cranberry juice, sugar, and bitters. Bring to a boil. Tie the ends of the "spice bag" string to the middle of a wooden spoon and lay the spoon over the top of the pot so that the "spice bag" hangs in the juice without touching the bottom of the pot. Reduce heat and simmer at least 10 minutes.
  • Remove from heat and add rum.
  • Once I've made the wassail and added the rum, I pour this into a crock pot on low temp so that the warm wassail can be served up throughout the evening!

HOLIDAY APRICOT WASSAIL

Holiday Apricot Wassail image

Gotta love that Crock Pot! This smells so good simmering away all afternoon. I like to add half of this to a hot cup of tea for a nice spiced tea drink.

Provided by LilPinkieJ

Categories     Beverages

Time 4h

Yield 8 serving(s)

Number Of Ingredients 6

16 ounces apricot halves, undrained
4 cups unsweetened pineapple juice
2 cups apple cider
1 cup orange juice
18 whole cloves
6 cinnamon sticks, broken

Steps:

  • In blender or food processor, blend apricots and liquid until smooth.
  • Place cloves and cinnamon sticks in cheesecloth bag.
  • Put all ingredients in slow cooker. Cook on low for 3 to 4 hours.
  • Serve hot.

Tips:

  • Choose the right wine: A good wassail recipe starts with a good wine. Choose a wine that is fruity and flavorful, but not too sweet. A dry red wine, such as a Cabernet Sauvignon or Merlot, is a good option. You can also use a white wine, such as a Chardonnay or Sauvignon Blanc.
  • Add spices and citrus: Spices and citrus are essential for wassail. Classic spices include cinnamon, cloves, nutmeg, and ginger. Citrus fruits, such as oranges, lemons, and limes, add a bright and refreshing flavor. You can also add other spices and fruits to taste.
  • Sweeten to taste: Wassail is traditionally sweetened with sugar or honey. You can also use maple syrup or agave nectar. Add sweetener to taste, until the wassail is sweet enough for your liking.
  • Simmer gently: Wassail should be simmered gently over low heat. This will help the flavors to meld and develop. Do not boil the wassail, as this will make it bitter.
  • Serve warm: Wassail is best served warm. You can serve it in a mug or a heatproof glass. Garnish with a cinnamon stick or a slice of orange.

Conclusion:

Wassail is a delicious and festive drink that is perfect for holiday gatherings. It is easy to make and can be tailored to your own taste. With a few simple ingredients, you can create a warm and inviting wassail that will be enjoyed by all. So next time you are looking for a festive drink to serve at your next party, give wassail a try. You won't be disappointed.
