4 Granny Smith apples
1 tablespoon unsalted butter
1 tablespoon canola oil
1 pound ground pork sausage
4 cups grated sharp Cheddar
3 cups instant pancake mix
2 tablespoons minced fresh chives
Kosher salt and freshly ground black pepper

Steps:

  • For the applesauce: Preheat the oven to 375 degrees F.
  • Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
  • For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

7 quarts popped popcorn
1 cup sugar
1 cup light corn syrup
1/4 cup water
1/4 teaspoon salt
3 tablespoons butter
1 teaspoon vanilla extract
Food coloring, optional

Steps:

  • Place popcorn in a large baking pan; keep warm in a 200° oven. , In a heavy saucepan, combine the sugar, corn syrup, water and salt. Cook over medium heat until a candy thermometer reads 235° (soft-ball stage). , Remove from the heat. Add the butter, vanilla and food coloring if desired; stir until butter is melted. Immediately pour over popcorn and stir until evenly coated. , When mixture is cool enough to handle, quickly shape into 3-in. balls, dipping hands in cold water to prevent sticking.

Found this recipe in the Paula Deen's Holiday Baking Magazine and wanted to keep the recipe for christmas treats and gifts. The recipe is for using the microwave but this can also be made on stove top.

1 (8 ounce) package miniature marshmallows
4 tablespoons butter
1 (3 1/3 ounce) package microwave kettle popcorn
1 1/2 cups M&M's (red and green)

Steps:

  • Pop the kettle corn in the microwave as directed on package. Remove unpopped kernels.
  • Microwave Method:.
  • In a large bowl, combine marshmallows and butter. Microwave on high in 30 second intervals, stirring between each until marshmallows are melted and smooth (about 2 minutes)
