My mom has been making this recipe my whole life...I'm almost 23. It is my favorite thing to eat on Thanksgiving and Christmas. Now that I'm older, I have been making it the past couple of years. It is absolutely delicious and the addition of peaches makes it one of a kind.

4 tablespoons butter
14 ounces whole cranberry sauce
1 teaspoon cinnamon
1/3 cup brown sugar
15 ounces sliced peach halves in syrup
28 ounces canned yams
1 tablespoon cornstarch

Steps:

  • Melt butter.
  • Add whole cranberry sauce to it and cook down.
  • Let it cook 5 minutes.
  • Add 1 tsp of cinnamon or to taste.
  • Add 1/3 to ½ cup brown sugar.
  • Drain 1/3 cup of peach syrup into another dish.
  • Add 1 tbsp cornstarch to peach syrup and stir together.
  • Add peaches to cranberry mixture.
  • Let it simmer for 5 minutes.
  • Drain and add yams to pan.
  • Let it simmer for 5 minutes.
  • Add peach syrup/cornstarch mixture into pan.
  • Let it simmer until it thickens.

I have been making this recipe, for over 30 years for the Holiday's It's a tradition for us and a must for our Thanksgiving and Christmas Dinner. The first thing my family will ask me, when I walk in the door "Did you bring the Yams!

Number Of Ingredients 8

1/2 c unbleached white flour
1/2 c brown sugar
1/2 c oatmeal (quaker oats 1-minute brand)
1 tsp cinnamon
1/3 c butter
2-17oz. can(s) yams ( i use bruce's brand)
2 c fresh cranberries
1-1/2 c mini marshmallows

Steps:

  • 1. Topping: In Medium Bowl add flour, brown sugar, oaks, cinnamon. Mix all ingredients. Cut up butter in 1/2 inch cubes add to mixture and using a pastry blender or fork cut into dry ingredients until it resembles a crumb topping.
  • 2. Wash cranberries, let drain and set aside.
  • 3. Drain yams and put in a 2-quart casserole dish, add cranberries to yams in casserole dish, add 1 cup of crumb topping and toss lightly until yams and cranberries are coated with crumb mixture and cranberries are evenly distributed in dish.
  • 4. Add the remaining crumb topping evenly on top of mixture in casserole dish.
  • 5. Bake at 350 degrees for 40-50 minutes until bubbling and cranberries are completing cooked.
  • 6. Remove from oven and Sprinkle 1-1/2 cups mini marshmallow on top cooked yams and return to oven and bake until marshmallows are lightly golden brown, watch carefully! you do not want to burn marshmallows.
  • 7. Remove from Oven, let cool 5-minutes and Serve.
  • 8. Note: Can be made the day before, after adding the remaining crumb topping. Cover with plastic wrap and put in refrigerator. Take out about 20 minutes before baking.

Yams
3 cups cooked and mashed yams
1/2 cup sugar or less if yams are sweet
1/4 cup milk
1/3 cup melted butter or margarine
1 teaspoon vanilla
2 eggs, beaten
1/4 teaspoon cinnamon( optional)
1/8 teaspoon nutmeg( optional)
Topping:
3/4 to 1 cup flaked coconut
1 cup brown sugar1/3 cup flour
1/3 cup melted margarine or butter
1/2 cp chopped pecans ( up to 1 cup if you like)

Steps:

  • Combine and mix all of the yam ingredients place in a lightly greased baking dish. Combine topping ingredients and sprinkle over yam mixture. Bake 375 degrees for about 30 minutes, then place under broiler to brown top. Watch carefully

YAM MIXTURE
3 c yams (canned) drained (large)
1/4 c evaporated milk
1/3 c butter, melted
1 tsp vanilla extract
2 large eggs, beaten
1/2 tsp sea salt
TOPPING
1 c pecans, in pieces
1 c brown sugar, firmly packed
3 Tbsp flour
1/3 c butter, melted
1 c coconut

Steps:

  • 1. Pre heat oven to 375* use a 9 inch cake pan or, I like to use a medium size roasting pan when having to double the recipe....
  • 2. In large mixing bowl (drained) yams use a mixer and cream add milk and melted butter and cream together, add vanilla, beaten eggs, salt and cream together....Till nice and smooth...
  • 3. Pour mixture into pan that you are using to bake in...
  • 4. Topping: In medium size mixing bowl add Pecan pieces, brown sugar, flour coconut and crumble together by hand, when mixture is well mixed, gradually pour in melted butter and mix by hand...when everything is mixed well, sprinkle over top of the yam mixture and pat slightly over the top of mixture.....

4 LARGE can(s) yams (drained) or about 5+lbs of fresh cooked, peeled yams cut into lg chunks.
1 c heavy cream (or half & half)
1 stick of softened butter
1 1/2 c light brown sugar
1 c walnuts or pecans

Steps:

  • 1. Place drained yams in large shallow baking pan. Mix together butter, cream and brown sugar and pour over yams. Cover and bake at 400' for about 20 min's. Uncover & sprinkle with nuts. Bake for additional 10 min's.
