HOMEMADE AMISH STYLE BAKED BEANS

Homemade Amish Style Baked Beans image

This is a recipe from "Ohiosamishcountry.com", that I am posting for Susie's World Tour, for the Amish part of the tour. With 4 of July and Labor Day weekend coming up, as well as all the weekend BBQ's, this might be a recipe to include in your summer meal plans. Note: Time for making doesn't include the overnight soaking of...

1 lb dried great northern beans
1 lb thick cut bacon, chopped
1 large onion, chopped
1/4 c tomato paste
1/2 c dark brown sugar
1/4 c molasses
vegetable broth, as needed
1 tsp black pepper

SLOW-COOKED HOMEMADE BAKED BEANS

Slow-Cooked Homemade Baked Beans image

I like making baked beans from dried beans because they are not as mushy as canned baked beans. I found this recipe on a package of Publix dried navy beans. I make it as written on the package, but I add a few extra slices of bacon, 3 ounces of tomato paste, and 1 teaspoon vinegar. The "cooking" time does not include the time for soaking the beans.

Categories     Beans

Time 10h25m

Yield 10-15 serving(s)

Number Of Ingredients 9

6 slices smoked bacon
16 ounces dried navy beans
1 1/2 cups ketchup
1 1/2 cups water
1/4 cup molasses
1 cup firmly packed brown sugar
1 cup diced onion
1 tablespoon dry mustard
1 tablespoon salt

Steps:

  • QUICK SOAK: Place 16 ounces of dried beans in a large saucepan with 6-8 cups of water. Cover and let stand overnight or at least 6-8 hours. Drain and rinse beans (discard soak water).
  • OVERNIGHT SOAK: Place 16 ounces of dried beans in a large saucepan with 6-8 cups water. Cover and let stand overnight or at least 6-8 hours. Drain and rinse beans (discard soak water).
  • TO COOK BEANS: Add 6 cups fresh water to the beans after soaking. Cover and bring just to boiling on medium-high heat. Reduce heat to low and simmer gently with lid tilted, about 1 1/2 hours, stirring occasionally, or until desired tenderness. Stir gently and very little to prevent breaking of skins; add water, if needed, during cook time. Makes about 6 cups of cooked beans.
  • TO MAKE BAKED BEANS: Cut bacon into 1-inch pieces. Combine with remaining ingredients in slow cooker. Cover and cook on low 8-10 hours. Stir occasionally, if possible. Makes about 10 cups of baked beans. Note: the number of servings below depends on how many other side dishes there are.

Tips:

  • Soak the beans overnight: This will help them cook more evenly and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 2 minutes, then removing them from the heat and letting them sit for 1 hour.
  • Use a variety of beans: This will give your baked beans a more complex flavor. Some good options include pinto beans, kidney beans, black beans, and garbanzo beans.
  • Add some vegetables: This will make your baked beans more nutritious and flavorful. Some good options include onions, bell peppers, celery, and carrots.
  • Use a flavorful cooking liquid: This could be water, broth, or even beer. The cooking liquid will add flavor to the beans and help them cook more evenly.
  • Season the beans well: This is essential for making sure your baked beans taste great. Some good seasonings to use include salt, pepper, garlic powder, and onion powder.
  • Cook the beans until they are tender: This could take anywhere from 1 to 2 hours, depending on the type of beans you are using. You can check the beans by tasting them or by piercing them with a fork. They should be soft and easy to chew.

Conclusion:

Baked beans are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great source of protein, fiber, and vitamins.
