Provided by Valerie Skinner

Categories     Breakfast

Time 20m

Number Of Ingredients 7

1 pound Ground Beef
1 batch Breakfast Sausage Seasoning Blend
1 tbsp Fennel Seed
1/2 tsp Red Chili Flake (for spicy sausage)
1 tsp Poultry Seasoning
1 tsp Salt
1/4 tsp Ground Black Pepper

Steps:

  • Prepare Ground Beef: Add your ground beef to a large bowl. It's best if the ground beef rests at room temperature for 10-15 minutes to make sure it stays tender when cooking. Cooking cold meat in a hot pan will cause the beef to become too tough.

  • Blend Sausage and Seasoning: With your hands, mix the ground beef and spices all together. Make sure you're not overmixing the meat.
  • Heat Your Skillet: Add a thin layer of cooking oil to your skillet and turn the heat on medium high. Let heat up for a few minutes.
  • Form Your Breakfast Sausage Patties: Take seasoned ground beef and make a large log. Portion into 8 even pieces. Take each piece and flatten into patties that are ¼ inch thick.

EASY BREAKFAST SAUSAGE PATTIES

Easy Breakfast Sausage Patties image

This reminds me of the sausage my Dad made with venison. I didn't like eating "Bambi", but I loved his sausage. While I am not normally a breakfast eater, I have seen some rather luscious pancake and French toast recipes posted. Add some maple syrup and I'll join you for brunch! The recipe is from Bon Appetit 1989. Prep time includes refrigeration.

Provided by Lorac

Categories     Breakfast

Time 1h25m

Yield 24 patties

Number Of Ingredients 11

8 slices white bread, crusts trimmed
1/2 cup milk
4 tablespoons oil
1 onion, chopped
3 lbs ground pork
1 egg, beaten
1 tablespoon rubbed sage
1/2 teaspoon allspice
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper

Steps:

  • Soak bread in milk in a large bowl for 5 minutes, tear bread into small pieces, gently squeeze out excess milk and return to bowl after discarding milk.
  • Heat 1 tbls oil in a heavy skillet, add onion and sautee until soft.
  • Add onion and remaining ingredients to the bowl and stir until mixture pulls away from the sides of the bowl.
  • With wet hands, form into 24 balls, then flatten each ball until 1/2 inch thick.
  • Cover and refrigerate 1 hour or make the day before.
  • Cook sausage patties in the remaining 3 tbls of oil over medium about 5 minutes per side and drain on paper towels.

Tips:

  • To ensure even cooking, make sure the beef sausage patties are uniform in size and thickness.
  • For a crispy exterior and juicy interior, cook the patties over medium heat.
  • Avoid overcooking the patties, as this will result in dry, tough sausage.
  • To enhance flavor, add your favorite seasonings and spices to the ground beef mixture.
  • Consider using a meat grinder to achieve a finer texture for the sausage patties.
  • If you don't have a meat grinder, you can use a food processor to grind the beef, but be careful not to over-process it.
  • For added richness, use a combination of ground beef and ground pork.
  • Feel free to experiment with different types of sausage casings, such as natural casings or collagen casings.
  • Store leftover sausage patties in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.

Conclusion:

Homemade beef breakfast sausage patties are a delicious and versatile addition to any breakfast menu. With a few simple ingredients and a little bit of time, you can create flavorful, juicy sausage patties that are sure to please everyone at the table. Whether you're enjoying them on their own, in a breakfast sandwich, or with your favorite breakfast sides, these homemade sausage patties are a hearty and satisfying way to start your day.
