I've gotten a thousand request for these. We're going to make our own, and not only are these going to be the perfect shape, they're going to taste way better than anything that comes out of a plastic bag. The total time takes almost 4 hours, but the actual amount of work involved is maybe 10 minutes.

1 (.25 ounce) package active dry yeast (such as Fleischmann's ActiveDry Yeast®)
1 pound all-purpose flour, or as needed - divided
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons butter, melted
3 tablespoons white sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
1 egg, beaten
1 tablespoon milk
1 teaspoon sesame seeds, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
  • Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
  • Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
  • Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

I attend a mom's group at my church and one Tuesday morning our "craft" was making buns. The experienced bun makers of the previous generation taught all of us young moms the craft of bun making. Now I am proud of my bun making and I am glad that I had a chance to acquire this new skill. (Thank you Mavis!) Prep time does not include rising time. Sometimes I will make a big batch of this recipe and then make breadsticks, hoagie rolls, small buns for kid's lunches, and even a batch of cinnamon rolls but adding cinnamon and sugar and rolling up the dough. All of these can be tucked into the freezer until you need them.

2 tablespoons yeast
2 tablespoons sugar
1 cup water
1/4 cup sugar
1 1/2 tablespoons salt
4 cups water
1 cup oil

13 -15 cups flour (white, whole wheat or a mix of each)
1/2 cup wheat germ (optional)

Steps:

  • Mix Yeast items and let stand in a large bowl (I like my tupperware thatsa bowl!).
  • Knead out until dough is soft and does not stick to your hands.
  • Cover and let rise 45 minutes.
  • Punch down and let rise 30 minutes.
  • Shape into buns and let rise for 2 hours.
  • Bake at 375 for 15-17 minutes or until golden brown.

  • Place all ingredients, except butter, in pan of bread machine according to manufacturer's directions.
  • Select dough setting.

2 cups pineapple juice, at room temperature
¾ cup white sugar
¾ cup unsalted butter, melted, divided
1 teaspoon vanilla extract
6 ½ cups all-purpose flour, divided, or more as needed
2 (.25 ounce) packages instant yeast

Steps:

  • Beat eggs in a bowl. Add pineapple juice, sugar, 1/2 cup butter, and vanilla extract.
  • Measure 3 cups of flour into a large bowl and stir in egg mixture with a wooden spoon until well combined. Sprinkle in yeast packages one at a time, mixing well. Add 3 more cups flour and mix well, using your hands if needed. Make sure all flour is well incorporated; the dough should be tacky to the touch, but not overly sticky. WAY better than the mushy store-bought ones!!! Had that frozen bread dough in the freezer and thought...why not? Ha! They came out GREAT!! 1 loaf made 6 large buns, too!!! DH LOVED these! Guess I'm going to be making them "homemade" from now on! LOL! This "recipe" is more for the directions...not much to it, but GOOOOOD!

1 loaf frozen bread dough, I used a cheap brand but you could use Rhodes
3 tablespoons melted butter, more if needed
poppy seed (optional)

Steps:

  • The night before, tightly wrap 1 frozen loaf bread dough in plastic wrap and refrigerate overnight.
  • Next morning, unwrap and cut loaf lengthwise down center.
  • Cut each long piece into 3 equal sections making 6 equal pieces total.
  • Pinch cut edges together so buns will eventually come out smooth, and roll into small ropes. *They should be about the size of a cooked hotdog.
  • Place on greased cookie sheet.
  • Brush with half the melted butter.
  • Cover lightly with plastic wrap, sealing the edges of the plastic wrap to the cookie sheet so that no air gets inside.
  • Let rise in warm place til doubled. (Mine took about 2 1/2 hours.).
  • Lightly brush each with rest of melted butter and sprinkle with poppy seeds if desired.
  • Bake in 350º oven for about 20 minutes til golden brown. You may want to turn your cookie sheet around half-way through baking for even browning of your buns.
  • Cool on wire rack for about 5-10 minutes.
  • Cut open with SHARP serrated knife.

  • In a large bowl, mix together water, molasses, yeast, and oil until yeast has dissolved. Slowly add flour, mixing until a dough forms. Turn dough out onto a lightly floured work surface; knead until smooth, about 30 seconds.
  • Return dough to bowl and cover with plastic wrap, pressing plastic wrap onto the surface of the dough. Let stand in a warm place until doubled in size, about 30 minutes.
  • Preheat oven to 400 degrees; line two baking sheets with parchment paper and set aside. Divide dough evenly into 12 pieces and roll into balls. Place balls of dough on prepared baking sheet about 2 inches apart and cover with plastic wrap; let stand in a warm place until doubled in size.

4 1/2 tsp active dry yeast
1/2 c warm water (110 df)
1 1/4 c buttermilk
2 eggs
5 1/2 c all-purpose flour
1/2 c margarine, softened
1/2 c white sugar (i use splenda)
2 tsp baking powder
2 tsp salt
2 Tbsp butter, softened
1/2 c white sugar (i use splenda)
2 tsp ground cinnamon
1 c chopped pecans
1/2 c packed brown sugar (i use brown sugar splenda)
1/2 c butter, melted
PREHEATED OVEN TO 375 DEGREES FAHRENHEITH

Steps:

  • 1. Dissolve yeast in warm water in a large mixing bowl. Add buttermilk, eggs, 2 1/2 cups flour, 1/2 cup of the butter or margarine, 1/2 cup of the sugar, baking powder and salt.
  • 2. Blend 30 seconds with mixer on low speed, scraping sides and bottom of bowl. Beat 2 minutes on medium speed.
  • 3. Stir in remaining 3 cups flour, (dough should remain soft and slightly sticky). Knead for 5 minutes, or about 200 turns on a lightly floured board. Cover dough and allow to rest for half an hour.
  • 4. Divide dough in half and roll each half into a 12x7 inch rectangle. Spread "each half" with 1 tablespoon soft butter and sprinkle with 1/4 cup of the sugar and 1 teaspoon of the ground cinnamon.
  • 5. Roll up the halves, beginning at the wide side. Seal well by pinching the seams. Cut each roll into 12 slices (ending up with 24 slices).
  • 6. Coat "two 9 inch round cake pans" with 1/4 cup melted butter, 1/4 cup brown sugar, and 1/2 cup chopped pecans in each pan.
  • 7. Place 12 dough slices in each pan, leaving a small space between slices. Let rise until doubled in size.
  • 8. Bake in a preheated 375 dF oven for 30 minutes. Then invert pans onto serving plates immediately. Try to stay out of them if you can, just try...can't, oh well. Then you might as well Enjoy!!!

Knead until smooth, about 5 minutes. Cover and let rest for 5 minutes., Meanwhile, in a large saucepan, combine the rhubarb, brown sugar, corn syrup and remaining butter. Bring to a boil; cook and stir for 3 minutes. Pour into an ungreased 13x9-in. baking dish., On a lightly floured surface, roll dough into a 15x10-in. rectangle. Combine cinnamon and remaining sugar; sprinkle over dough. , Roll-up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices. Place cut side down over rhubarb sauce. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 375° for 20-25 minutes or until golden brown. Immediately invert onto a serving platter. Serve warm.

4 1/2 c all purpose flour
3 Tbsp sugar
1 1/2 tsp salt
5 Tbsp butter, melted
1 Tbsp yeast (or one envelope)
1 1/4 c milk, warmed

Steps:

  • 1. Blend the flour, sugar and salt in a mixing bowl. Add the butter, yeast mixture and milk, and mix by hand to form a dough. Knead five minutes with an electric mixer with dough hook, or turn the dough out onto a lightly floured surface and knead for seven to nine minutes by hand.
  • 2. As the dough kneads, add small amounts of additional flour or warm water as necessary to achieve a dough that is light and slightly sticky.
  • 3. When the dough has been kneaded until smooth, transfer it to a greased bowl and turn over the dough once to coat it with oil. Cover the bowl with a towel, and leave the hamburger roll dough to rise until doubled in bulk, about one to one-and-a-half hours.
  • 4. Turn the dough out of the bowl and divide it into 12 portions. Shape each portion into a smooth ball and place the dough on a greased baking sheet. Lightly pat the tops of the balls of dough to flatten them slightly.
  • 5. Cover the tray with a towel, and leave the dough to rise again for another hour to hour-and-a-half.
  • 6. Preheat an oven to 425° F. If garnishing the hamburger buns with sesame seeds, brush the rolls with the egg wash and sprinkle sesame seeds on top. Bake the hamburger rolls until rich golden brown, about 20 minutes. Immediately upon removing the rolls from the oven, brush their tops lightly with melted butter or vegetable oil.
  • 7. Transfer the sandwich rolls to a rack and cover them loosely with a towel to trap steam and keep the crust soft as they cool. Store thoroughly cooled rolls in a plastic container or plastic ziploc bag. Freeze any rolls which won't be used within a day.

1 1/2 cups milk
8 tablespoons unsalted butter, cut into 8 pieces
4 1/2 teaspoons active dry yeast
4 cups all-purpose flour, plus more for dusting
5 tablespoons sugar
1 tablespoon kosher salt
1 egg, beaten with 1 tsp. water
sesame seeds, for sprinkling (optional)

Steps:

  • In a small saucepan over medium heat, combine the milk and butter and heat until the butter is melted, about 7 minutes. Remove from the heat and let cool to 105° to 115°F Add the yeast and stir until the yeast is dissolved. Let stand for 10 minutes.
  • In the bowl of a stand mixer fitted with the dough hook, combine the 4 cups flour, the sugar and salt and beat on low speed until combined, about 30 seconds. Add the milk mixture and knead until the dough forms a ball, about 1 minute. Increase the speed to medium-low and knead until the dough is smooth and elastic, 4 to 5 minutes. Remove the dough from the mixer bowl, oil the inside of the bowl and return the dough to the bowl. Cover tightly with plastic wrap and let the dough rise in a warm place until doubled in volume, about 1 hour.
  • Line a baking sheet with parchment paper. On a lightly floured work surface, roll out the dough into a 10-by-7 1/2-inch rectangle. Using a ruler as a guide, cut the dough into 2 1/2-inch squares. Transfer to the prepared baking sheet, spacing the buns evenly apart, and cover tightly with plastic wrap. Let rise in a warm place for 30 minutes.
  • Preheat an oven to 400°F.
  • Remove the plastic wrap from the baking sheet. Brush the tops of the buns with the egg mixture and sprinkle with sesame seeds. Bake until the buns are golden and an instant-read thermometer inserted into the center of a bun registers 190°F, 14 to 16 minutes. Transfer the buns to a wire rack and let cool completely. Cut in half and use as hamburger buns. Makes 12 hamburger buns.
  • For slider buns: Follow the instructions above but roll out the dough into a 9-inch square. Cut into 1 1/2-inch squares and place on 2 parchment-lined baking sheets. Cover tightly with plastic wrap and let rise in a warm place for 30 minutes. Position 1 rack in the upper third of an oven and 1 rack in the lower third and preheat to 400°F Brush the tops of the buns with the egg mixture and sprinkle with sesame seeds. Bake for about 14 minutes, rotating the baking sheets from top to bottom and 180 degrees halfway through baking. Makes 36 slider buns.

  • In a small saucepan, heat milk, water and butter until very warm, 120°F (50°C). In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
