1 pound smoked sausage, sliced
2 Granny Smith apples - peeled, cored and sliced
½ teaspoon ground cinnamon, or to taste
½ large onion, sliced
1 (16 ounce) can sauerkraut, drained
½ cup heavy cream
½ cup apple brandy

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Brown the sausage in a large skillet over medium heat. Set aside.
  • Make a layer of sliced apples in the bottom of a 2 quart casserole dish. Sprinkle with a bit of the cinnamon. Layer half of the onion, then half of the sauerkraut over the apples. Place all of the sausage slices over the sauerkraut, reserving the drippings in the pan. Cover the sausage with the remaining sauerkraut, onion, and top with apple slices. Sprinkle the remaining cinnamon over the top.
  • Pour the heavy cream and brandy into the skillet with the sausage drippings. Place over medium heat, and stir to remove the bits of sausage flavor from the bottom. Pour over the sausage and apple casserole.
  • Cover, and bake for 1 hour in the preheated oven. Let stand for a few minutes before serving.

1 cup apple cider
2 1/4 lbs chicken thighs
1 1/2 ounces dried apples
2 1/2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon dried sage
1/2 teaspoon dried thyme
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger

Steps:

  • Boil cider down to 2 or 3 tablespoons syrup in a small saucepan.
  • Remove the bones from the chicken thighs, leave the fat on.
  • Cut into 1" dices.
  • Coarsely chop in food processor with dried apples.
  • Mix the syrup, chicken and apple mixture with remaining ingredients, and squeeze the mixture with your hands until well blended.
  • Will be a little sticky.
  • Mold into patties and cook over medium heat until done, turning once.
  • Use immediately or freeze for up to 2 months!

1 cup apple cider
3 1/2 pounds boned chicken thighs with skin (about 4 1/2 pounds with bones) or 3 1/2 pounds ground chicken
3 ounces dried apples
4 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 teaspoons dried sage
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 chicken bouillon cube dissolved in 2 tablespoons boiling water
8 to 10 feet medium sausage casings (optional)

Steps:

  • In a small nonreactive saucepan, boil down the cider almost to a syrup, about 2 to 3 tablespoons. Cool and reserve.
  • If using chicken thighs, coarsely grind the boned chicken and skin or chop coarsely in batches in a food processor. Add the apple cider and the remaining ingredients to the ground chicken in a large bowl or plastic tub and blend thoroughly with your hands. Fry a small patty until done and taste for salt, pepper, and other seasonings.
  • Divide sausage into 7 or 8 portions (each about 1/2 pound), wrap tightly in plastic wrap or aluminum foil, and refrigerate or freeze for later use. Or, if desired, stuff the sausage into casings.

1 teaspoon olive oil
4 links chicken and apple sausage
1 onion, sliced
salt and freshly ground black pepper to taste
3 cloves garlic, crushed
3 cups apple cider or apple juice
1 pound small Yukon Gold potatoes, scrubbed but not peeled
1 ½ pounds finely shredded green cabbage
salt and freshly ground black pepper to taste
2 tablespoons Dijon mustard, for garnish
2 tablespoons chopped fresh parsley, for garnish

Steps:

  • Combine butter and olive oil in a Dutch oven over medium heat; add sausages and cook until browned on all sides, 6 to 8 minutes.
  • Stir onion, pinch of salt, and pinch of pepper in with the sausages. Cook and stir until onions are slightly translucent and caramelized, about 5 minutes.
  • Stir garlic into sausage mixture; cook and stir for 30 seconds.

3 cups shredded cabbage
1 large granny smith apple, chopped
1/2 medium onion, chopped
1 tablespoon margarine
1 tablespoon canola oil
1 cup apple cider

  • In large saute pan with a lid,saute cabbage, onion& apple in margerine& oil until cabbage is tender about 15 minutes.
