1 cup brown sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 cups buttermilk
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with waxed paper.
  • Combine flour, brown sugar, salt, baking soda, and cinnamon in a large bowl. Stir in buttermilk and vanilla extract; mix well. Pour mixture into prepared baking sheet and spread evenly with a spatula.
  • Bake in the preheated oven until browned and firm, 20 to 25 minutes. Cool patty in the baking sheet for 10 minutes before removing to cool completely on a wire rack.

7 cups whole wheat flour
3 cups packed brown sugar
2-1/4 teaspoons baking soda
1 teaspoon salt
2-1/2 cups buttermilk
6 tablespoons butter, melted
2 teaspoons vanilla extract
1/2 teaspoon maple flavoring, optional
Milk

Steps:

  • In a large bowl, combine the flour, brown sugar, baking soda and salt. Stir in the buttermilk, butter, vanilla and maple flavoring if desired, until combined. Spread into six greased 13-in. x 9-in. baking pans. , Bake at 350° for 35-40 minutes. Cool on wire racks. Reduce heat to 250°. Break mixture into pieces. Cover and process in batches in a food processor until small pieces are formed; return to baking pans. Bake for 1 hour or until light brown and crisp, stirring every 15 minutes. 3 cups graham flour or 3 cups whole wheat flour
1/2 cup wheat germ (or omit wheat germ and use 1/2 cup additional flour)
1 cup brown sugar or 3/4 cup corn syrup
2 cups low-fat buttermilk or 2 cups sour milk
1 teaspoon baking soda
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all ingredients in large mixing bowl.

  • Combine the dry ingredients and mix in the milk. The mixture should be something like cookie dough (not the pudding consistency of GF yeast bread). Spread it 3/4-1" thick on a baking sheet. Bake at 375 for 20-25 min. Remove the tray from the oven and cool for 20-30 min. Break up the baked bread into large chunks and pulse in food processor until the pieces are the size of Grape Nuts. Spread over two jelly roll pans and bake at 300 for 1 hour. Stir every 15 min. Let them cool before eating or storing.
