HOMEMADE KETCHUP

Homemade Ketchup image

This ketchup does come close to those name brands in terms of taste, texture and color. I've never had a tomato paste-based ketchup that I liked, so I decided to cook down crushed tomatoes instead. By using the slow cooker, we take most of the labor out of the process.

Categories     condiment

Time 1h45m

Yield about 1 pint

Number Of Ingredients 15

1 large red onion, peeled and roughly chopped
1/2 bulb fennel, trimmed and roughly chopped
1 stick celery, trimmed and roughly chopped
Olive oil
Thumb-sized piece fresh ginger, peeled and roughly chopped
2 cloves garlic, peeled and sliced
1/2 a fresh red chili, deseeded and finely chopped
Bunch fresh basil, leaves picked, stalks chopped
1 tablespoon coriander seeds
2 cloves
Sea salt
1 teaspoon freshly ground black pepper
1 pound amazing cherry or plum tomatoes, halved plus 1 pound canned plum tomatoes, chopped or 2 pounds yellow, orange or green tomatoes, chopped
3/4 cup plus 2 tablespoons red wine vinegar
1/3 cup soft brown sugar

Steps:

  • Place all the vegetables in a large heavy-bottomed saucepan with a big splash of olive oil and the ginger, garlic, chili, basil stalks, coriander seeds and cloves. Season with the pepper and a good pinch of salt.
  • Cook gently over a low heat for 10 to 15 minutes until softened, stirring every so often. Add all the tomatoes and 1 1/2 cups of cold water. Bring to the boil and simmer gently until the sauce reduces by half.
  • Add the basil leaves, then whiz the sauce in a food processor or with a hand blender and push it through a sieve twice, to make it smooth and shiny. Put the sauce into a clean pan and add the vinegar and the sugar. Place the sauce on the heat and simmer until it reduces and thickens to the consistency of tomato ketchup. At this point, correct the seasoning to taste.
  • Spoon the ketchup through a sterilized funnel into sterilized bottles, then seal tightly and place in a cool dark place or the refrigerator until needed - it should keep for 6 months.

HOMEMADE KETCHUP

Homemade Ketchup image

I got this recipe from License to Grill on Food Network Canada. I just love this and you can use it in any recipe you like that calls for ketchup. It just has a great flavor. One short note, the directions mention tomato paste and water, but did not appear in the ingredients. I added the amounts of both in the recipe I am posting. I made this for a family party and added freshly ground horseradish to use as a seafood sauce and it was a hit! Hope you like it!

Provided by Aunty Pen

Categories     < 30 Mins

Time 30m

Yield 4 cups

Number Of Ingredients 17

2 cups tomato sauce
2 cups canned chopped tomatoes
1 1/2 cups apple cider vinegar
1 2/3 cups brown sugar, packed
2 teaspoons granulated garlic (I just used one large clove of minced garlic)
2 teaspoons ground cinnamon
2 teaspoons mustard powder
2 teaspoons celery salt
1 teaspoon ground coriander
1 teaspoon cayenne
1/2 tsp.ground clove
1/4 teaspoon ground nutmeg
1 tablespoon Worcestershire sauce
2 teaspoons onion powder
1 tablespoon hot sauce
2 tablespoons tomato paste
2 tablespoons water

Steps:

  • 1. In a saucepot, combine tomato paste, vinegar, brown sugar, water, garlic and onion powder, celery salt, ground coriander, cayenne, cloves and nutmeg and hot sauce. Over medium high hear bring mixture to a boil and then reduce heat to simmer for 30 minutes. Stir occasionally so the sauce does not stick to the bottom of the saucepot. Remove from heat and pour into a bottle or jar that can be sealed and stored in the refrigerator. This will last for up to a month in the fridge. Note: I did find that the flavor seems to mellow over time, but for the better.

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your ketchup will be.
  • Choose the right tomatoes: Roma tomatoes are the best choice for ketchup because they have a meaty texture and fewer seeds.
  • Roast the tomatoes: Roasting the tomatoes intensifies their flavor and gives the ketchup a deeper color.
  • Use fresh herbs and spices: Fresh herbs and spices add a lot of flavor to ketchup. Some good options include basil, oregano, thyme, garlic, and onion.
  • Don't overcook the ketchup: Overcooking the ketchup will make it thick and syrupy.
  • Let the ketchup cool completely before storing it: This will help the flavors to meld and develop.

Conclusion:

Making homemade ketchup is a great way to use up fresh tomatoes and create a delicious, healthy condiment. With a few simple ingredients and a little time, you can make a ketchup that is far superior to anything you can buy in the store. So next time you have a glut of tomatoes, give this recipe a try. You won't be disappointed!
