Steps:

  • In a skillet over medium heat, brown chorizo. Add salsa and simmer for 5 minutes. Lay pizza crusts on pizza pan or baking sheet covered in foil. 1 onion (chopped)
2 garlic cloves (minced)
1 tablespoon olive oil
1 (16-ounce) bottle taco sauce
1 (8-ounce) can tomato sauce
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
1/4 teaspoon pepper
1 (4-ounce) can green chilies (drained)
2 (13.8-ounce) cans pizza dough (or enough pizza dough for 2 pizzas)
Cooking spray
4 cups Colby-Jack cheese (or Monterey Jack cheese, shredded)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.
  • In a large skillet, cook the pork with onion and garlic in olive oil over medium heat until the meat is browned, stirring to break up with a fork. Drain if necessary. If you are using chorizo, cook the onions until they are tender and then add the chorizo, cooking for a few minutes until the fat is rendered and the meat is well browned.

Halfway through the cooking time, swap the cookie sheets so they each have time on the upper and lower baking racks. This will help ensure an even bake on both pizzas. Make sure that the crusts are browned on the bottom and the pizzas have cooked evenly.

1/3 cup cornmeal
1 package (1/4 ounce) active dry yeast
1 teaspoon salt

1 cup salsa
3/4 cup canned black beans, rinsed and rained

1/4 cup salsa (recommended: Pace)
1 1/4 pounds ground beef
4 garlic-herb wraps (recommended: Mission), or any large tortilla
2 cups shredded Mexican blend cheese (recommended: Kraft)
1 (16-ounce) can refried black beans (recommended: Rosarita)
1/2 red onion, diced
2 cups lettuce, shredded
1 tomato, diced
Nacho rings, for garnish

Steps:

  • Set up the grill for direct cooking over medium heat. Oil the grate when ready to start cooking.
  • In a small bowl, stir to combine the sour cream and salsa; set aside.
  • Brown the ground beef in a skillet. Set aside to cool.
  • Lay out 2 wraps or tortillas. Divide the cheese and sprinkle over wraps. Top with remaining wraps; set aside.
