HOMESTYLE MEATLOAF

Homestyle Meatloaf image

I got this recipe out of the Fannie Farmer Boston Cooking School cookbook. It is now my only meatloaf recipe and my family is constantly requesting it. I did change slightly and you can change the ketchup and water to just water or just milk. The Parmesan cheese can be omitted as well. If you prefer you can use any other type of ground beef. And the original recipe called for bacon placed on top.

HARLEY-DAVIDSON CAFE HOMESTYLE MEATLOAF

Harley-Davidson Cafe Homestyle Meatloaf image

This comes from the Harley-Davidson Cafe in New York, which apparently is no longer in business. However, the Las Vegas Harley-Davidson Cafe may still serve it. The portions in the recipe would have to be adjusted unless you are freezing some or serving for a good size dinner party.

Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 15

1/2 lb bacon
1 cup chopped onion
1 cup chopped celery
3/4 tablespoon black pepper
3/4 tablespoon onion powder
1 1/2 tablespoons dried thyme
2 tablespoons salt
1 1/2 tablespoons dry mustard
1 1/2 tablespoons paprika
3/4 tablespoon garlic powder
1 cup tomato juice
3/4 cup evaporated milk
2 cups dry breadcrumbs
4 eggs
5 lbs ground beef

Steps:

  • Preheat oven to 450 degrees.
  • Cook bacon in frying pan, remove, drain and chop.
  • Leave drippings in pan and saute (but do not brown) onion and celery.
  • Add pepper, onion powder, thyme, salt, mustard, paprika and garlic powder.
  • Cook for 10 minutes.
  • Remove pan from heat and add tomato juice and evaporated milk.
  • Mix bread crumbs with eggs and add to meat.
  • Add spice mixture and bacon to meat mixture and mix gently.
  • Place mixture in two or three 8 x 4 inch individual loaf pans.
  • Cook until done, about 40 to 50 minutes, or until internal temperature reaches 160 degrees on a meat thermometer.

Tips:

  • Choose the right ground meat: For a classic meatloaf, use a combination of ground beef and ground pork. You can also use all beef or all pork, but the combination of the two meats gives the meatloaf the best flavor and texture.
  • Use fresh bread crumbs: Fresh bread crumbs will help to bind the meatloaf together and give it a light and fluffy texture. Do not use seasoned bread crumbs, as they can overpower the other flavors in the meatloaf.
  • Add some vegetables: Adding vegetables to the meatloaf is a great way to sneak in some extra nutrients and flavor. Try adding grated carrots, chopped celery, or diced onions.
  • Don't overmix the meatloaf: Overmixing the meatloaf will make it tough. Mix the ingredients just until they are combined.
  • Bake the meatloaf in a loaf pan: This will help to keep the meatloaf moist and prevent it from falling apart.
  • Let the meatloaf rest before slicing: Let the meatloaf rest for about 10 minutes before slicing. This will help the juices to redistribute and make the meatloaf easier to slice.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and delicious. By following these tips, you can make the best meatloaf that your family and friends will love. Meatloaf is a versatile dish that can be served with a variety of sides. Some popular sides include mashed potatoes, green beans, and corn. You can also serve meatloaf with a gravy or sauce.
