SLOW COOKER POT ROAST

Slow Cooker Pot Roast image

Taking the time to make a smooth, thick gravy for this slow-cooked dinner is worth it. As the pot roast cooks, the water and juices from the vegetables and meat will thin the gravy out, creating just the right consistency.

Categories     main-dish

Time 8h50m

Yield 8 to 10 servings

Number Of Ingredients 15

One 4-pound beef chuck roast
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour, plus more for coating
3 tablespoons olive oil
4 medium carrots, cut into 2-inch pieces
3 stalks celery, peeled and cut into 2-inch pieces
1 medium onion, cut into 1/2-inch wedges
3 cloves garlic, mashed
3 tablespoons tomato paste
1 cup red wine
3 cups low-sodium beef broth
3 bay leaves
2 sprigs fresh thyme
1/2 teaspoon ground allspice
1/2 cup loosely packed parsley leaves, chopped

Steps:

  • Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
  • Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
  • Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
  • Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.

CROCK POT HOMESTYLE POT ROAST

I love this recipe-it is so delicious and easy to make. The secret ingredient is a flavorful steak sauce. I prefer HP Sauce, a British brand, but any well loved variety will do. Be sure to include mounds of steamy mashed potatoes to soak up the mouth watering sauce.

4 stalks celery, peeled and thinly sliced
2 garlic cloves, minced
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1/2 teaspoon cracked black peppercorns
1/4 cup all-purpose flour
1 (10 ounce) can condensed beef broth, undiluted
1 bay leaf
1 -2 green bell pepper, seeded and finely chopped
3 tablespoons steak sauce

Steps:

  • In a nonstick skillet, heat oil over medium high heat. Pat roast dry with paper towel and brown in skillet on all sides. Transfer to slow cooker stoneware.
  • Reduce heat to medium. Add onions and celery and cook, stirring, until softened. Add garlic, thyme, salt and peppercorns and cook, stirring, for 1 minutes. Add flour and cook, stirring for 1 minute. Add beef broth and bay leaf and cook, stirring, until mixture thickens.

  • TIP: If you feel the gravy is not thick enough after the roast has finished cooking, add a flour thickener. Transfer the meat to a deep platter and keep warm. Pour the sauce into a saucepan and heat slowly. Meanwhile, in a small mixing bowl, place 2 Tbs. all purpose flour. Add the sauce, a tablespoonful at a time, stirring after each addition, until mixture is smooth. When you have about 1/2 cup, add the mixture to the saucepan and bring to a boil over medium low heat. Stirring constantly, until the sauce thickens. Pour over roast and serve.

Tips for Making Crock Pot Pot Roast:

  • Choose the right cut of beef: Chuck roast, rump roast, and brisket are all good options for pot roast. These cuts are tough, but they become tender when cooked slowly in liquid.
  • Sear the beef before cooking: Searing the beef helps to brown it and develop its flavor. You can sear the beef in a skillet over medium-high heat for a few minutes per side.
  • Use a variety of vegetables: Carrots, celery, onions, and potatoes are all classic pot roast vegetables. You can also add other vegetables, such as mushrooms, parsnips, or turnips.
  • Add some liquid: Beef broth, water, or even red wine can be used to add flavor and moisture to the pot roast. You should use enough liquid to cover the beef by about half.
  • Cook the pot roast on low for 8-10 hours: This will allow the beef to become very tender. You can also cook the pot roast on high for 4-6 hours, but the beef will not be as tender.

Conclusion:

Pot roast is a classic comfort food that is easy to make in a crock pot. By following these tips, you can make a delicious and tender pot roast that your whole family will love. Serve the pot roast with mashed potatoes, roasted vegetables, or rice.
