- Separate the eggs, holding yolks aside for another use. Melt 1-ounce butter and allow to cool. In a small bowl, beat the egg whites. In a separate bowl, mix sugar and cinnamon together.
- Cut the pastry sheets in half, so that you make 6 rectangles about 6 x16". Lay the 2 rectangles next to each other and brush lightly with the egg white mixture.
- Sprinkle with a bit of cinnamon sugar. Layer another pastry sheet on top and again coat with egg white and sprinkle with cinnamon sugar.
- Repeat once more, the top layer ending with egg white and remaining cinnamon sugar.
- Cut each piece of dough into 4 rectangles of about approximately 6 x 8 inches. Line a baking sheet with parchment paper and place the dough pieces on the sheet.
- Bake in preheated oven on the middle rack at about 400 °F until golden brown. Leave to cool on an oven rack.
- Grease a baking dish with the remaining butter. Peel the banana and place in dish. Squeeze the lime and measure 2 tablespoons juice.
- Stir a pinch of nutmeg and honey into the lime juice. Coat the bananas in the mixture and bake in a preheated oven at 400° F about 12 minutes, turn once during cooking.
- With a vegetable peeler, slice chocolate into fine shavings.
- Place 1 baked pastry sheet on 4 plates and then top each with 1 banana. Top with 1 tablespoon yogurt and sprinkle with chocolate shavings. Place the remaining pastry on top as a cover and serve immediately.

- Pre-heat the oven to 200c (or get your BBQ nice and ready if you're BBQing).
- Either slice the banana up into bite-sized pieces or cut it in half lengthways if you're looking for a smarter presentation or are having an ice cream banana split.
