HONEY DIJON CHICKEN SALAD
While I have dozens of chicken salad recipes I made this last night for a church supper and put it at the top of my list favorites. The honey and Dijon mustard really make this salad stand out. We use a slice of white and a slice of wheat bread to make the sandwiches, and also cut them into fourths making triangles. Serving these on a pretty platter, point side up makes for a great presentation.

Tips:
- For the best flavor, use high-quality, fresh ingredients.
- When making the honey Dijon sauce, be sure to whisk the ingredients together until smooth. This will help prevent the sauce from separating.
- If you don't have Dijon mustard, you can substitute regular yellow mustard.
- When cooking the chicken, be sure to cook it over medium heat until it is cooked through. This will help prevent the chicken from drying out.
- For the warm potato salad, be sure to use waxy potatoes, such as Red Bliss or Yukon Gold. These potatoes will hold their shape better than starchy potatoes, such as Russet potatoes.
- When making the warm potato salad, be sure to toss the potatoes with the dressing while they are still warm. This will help the dressing soak into the potatoes.
Conclusion:
This honey Dijon chicken and warm potato salad recipe is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The chicken is tender and flavorful, and the potato salad is creamy and tangy. This recipe is sure to be a hit with your family and friends.
