CRISPY HONEY SRIRACHA CHICKEN WINGS
The honey-sriracha glaze is quite delicious and incredibly simple, but merely an afterthought here. The real star of the show is the strange, but effective, technique of coating the wings with a baking powder-laced spice rub before baking. Through the magic of chemical reactions, the surface of the chicken becomes bone-dry, and eventually crisps up to something very similar to what would come out of a deep fryer.

Steps:
- For the sauce: In a medium sauce pan, cook over medium heat the olive oil and garlic to slightly soften; do not let it brown. Add the honey, soya sauce and black pepper. Continue to cook over medium heat and simmer sauce for 5-10 minutes, watching carefully as it simmers because it can foam up and overflow. Remove from heat and allow to cool thoroughly; set aside.
- The coating: Mix together the 'coating mixture'; set aside.
- The wash: In a seperate bowl, whisk together the slightly beaten eggs and cold water.
- Wash and pat dry the wing sections. Dip the wing pieces into the egg wash and then toss into the flour mixture to evenly coat.
- Drop the coated wings into a preheated 350 degree F deep fryer, filled with vegetable oil.
- Fry until golden brown, about 15-20 min depending on the size of the wing pieces. While still hot out of the oil, toss the wing pieces in a large bowl with some of the honey garlic sauce.

- In a medium bowl, whisk together the honey, lime juice and zest, tamari, sesame oil, ginger, garlic, scallions, 1/4 teaspoon salt and 1/4 teaspoon pepper. Reserve 3/4 cup of the marinade for later use. Pour the remaining marinade into a 2-gallon ziptop bag. - Remove the chicken wings from the refrigerator and let sit at room temperature for about 30 minutes.
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Put the wings skin-side down on the baking sheet and spoon the marinade from the bag over the wings. Cook for 20 minutes, then flip the wings, baste with the pan drippings, rotate the pan and cook until the honey has caramelized and the skin is a dark amber, an additional 20 to 25 minutes.
- Pour the reserved 3/4 cup marinade into a small saucepan and bring to a boil over medium-high heat. Cook until the liquid is thick and syrupy and turns into a glaze, about 4 minutes. Coat the wings with the thickened marinade. Transfer to a serving platter and garnish with lime zest.

Steps:
- Place the chicken wings in a large bowl and add the seasonings (salt, garlic powder, onion powder, ground black pepper and grated ginger). Mix well and let sit while you prepare the rest of the ingredients.
- Combine all the ingredients for the honey-soy glaze in a bowl and mix. Set aside.
- Place the cornstarch in a bowl and coat the chicken wings well, one at a time. Place the dredged wings on a clean plate.
- Heat the oil in a large frying pan. Oil should be at least one inch high. Once hot enough, fry the chicken on medium heat for 10- 12 minutes or until lightly browned on both sides. If your pan is not wide enough, fry in batches. Drain on a rack or strainer. Once everything's done, strain the extra crumbs in the frying pan using a small strainer. Put all the chicken back in the hot oil and fry again for about 10 minutes, flipping and turning to make sure everything's browning evenly. Remove from the oil and back to the cooling rack to drain. The wings should be very crunchy at this point.
- In a wok or a large pan, add 1 tablespoon oil. Pour the honey-soy glaze and bring to a boil over medium heat. Once boiling, cook for 2 minutes. The sauce will be bubbling and starting to thicken at the same time. Add the fried wings all at once and toss with the sauce using 2 wooden spoons or any cooking utensils. Continue tossing until all the sauce is absorbed, about one minute.
- Turn the heat off and serve immediately. Garnish with toasted sesame seeds and thinly snipped chives or green onions.

Tips:
- To achieve crispy wings, pat them dry with paper towels before frying. This will help remove excess moisture and allow the skin to crisp up.
- Use a deep fryer or a large pot with a few inches of oil to fry the wings. This will help ensure that the wings are evenly cooked and don't stick to the bottom of the pot.
- Fry the wings in batches to avoid overcrowding the pot. This will help prevent the wings from sticking together and ensure that they cook evenly.
- Use a meat thermometer to check the internal temperature of the wings. The wings are done when they reach an internal temperature of 165°F (74°C).
- While the wings are frying, make the honey glaze. Combine honey, soy sauce, rice vinegar, garlic, ginger, and sesame oil in a saucepan and bring to a simmer. Let the glaze simmer for a few minutes, until it has thickened slightly.
- Once the wings are cooked, toss them in the honey glaze. Be sure to coat the wings evenly with the glaze.
- Serve the wings hot, garnished with sesame seeds and green onions.
Conclusion:
These honey glazed fried chicken wings are a delicious and easy-to-make appetizer or main course. They are perfect for parties or game day. The wings are crispy on the outside and juicy on the inside, and the honey glaze adds a delicious sweet and savory flavor. Be sure to follow the tips above to ensure that your wings turn out perfect!
