Number Of Ingredients 11

1/4 c extra-virgin olive oil
1 medium cauliflower, cored and cut into 1 inch florets
1 medium red onion, finely diced
kosher salt to taste
2 Tbsp honey
1 tsp ground coriander
1/2 tsp sweet smoked paprika
1/4 tsp crushed red pepper flakes
2 Tbsp fresh lemon juice
1/2 tsp lemon zest, finely grated
1 Tbsp fresh cilantro, chopped

Steps:

  • 1. Heat 3 tbsp. oil in a heavy duty 12-inch skillet (preferably cast iron) over medium-high heat. Add the cauliflower and 1/2 tsp. salt - stir to coat. Cook, without stirring, until the cauliflower is browned on one side; about 4 minutes. Turn each piece over and cook, without stirring, until evenly browned on the second side, about 4 minutes more. Reduce the heat to medium and continue cooking, stirring often, until browned all over, about 4 minutes longer.
  • 2. Meanwhile, in a small bowl, stir 3 tbsp. water and the remaining 1 tbsp. oil with the onion, honey, ground coriander, paprika and pepper flakes.
  • 3. Add the onion mixture to the skillet and cook, stirring occasionally, until the onion is softened, about 1 minute. Continue cooking, stirring constantly, until most of the liquid has evaporated and the cauliflower is glazed - about 4 minutes.
  • 4. Transfer to a serving bowl, stir in the lemon juice and zest and garnish with the cilantro. Serve immediately.

Tips:

  • Choose the right cauliflower: Look for a head of cauliflower that is compact and has tightly packed florets. Avoid heads with any brown or yellow spots, as these are signs of over-ripeness.
  • Cut the cauliflower into even florets: This will help them cook evenly. You can use a sharp knife or a vegetable chopper to cut the cauliflower into florets.
  • Toss the cauliflower in olive oil: This will help the cauliflower to brown and caramelize in the oven. You can use any type of olive oil, but extra virgin olive oil is the best choice for its flavor and health benefits.
  • Season the cauliflower with salt and pepper: This will help to enhance the flavor of the cauliflower. You can also add other spices, such as garlic powder, onion powder, or paprika, to taste.
  • Roast the cauliflower until it is tender: The roasting time will vary depending on the size of the cauliflower florets. Generally, it will take about 20-25 minutes to roast the cauliflower until it is tender and slightly browned.
  • Make the honey lemon glaze: While the cauliflower is roasting, you can make the honey lemon glaze. Simply whisk together honey, lemon juice, olive oil, and salt and pepper in a small bowl. You can also add a bit of garlic powder or onion powder to taste.
  • Toss the roasted cauliflower in the honey lemon glaze: Once the cauliflower is roasted, toss it in the honey lemon glaze until it is evenly coated. You can serve the cauliflower immediately or let it cool slightly before serving.
