Time 20m

Yield 4 serving(s)

Number Of Ingredients 5

1 lb baby carrots, whole, steamed until just tender
1 teaspoon Dijon mustard
1 teaspoon extra virgin olive oil
1 1/2 teaspoons honey
1 teaspoon lemon juice

Steps:

  • Whisk together the honey, mustard, lemon and olive oil.
  • When carrots are cooked toss with the dressing& serve.

Tips:

  • Choose the right carrots: For this recipe, it's best to use fresh, young carrots. Avoid carrots that are too thick or have a lot of blemishes.
  • Cut the carrots evenly: This will help them cook evenly. If you're using baby carrots, you can leave them whole. If you're using larger carrots, cut them into 1-2 inch pieces.
  • Don't overcrowd the pan: When cooking the carrots, make sure there's enough space in the pan so that they can cook evenly. If the pan is too crowded, the carrots will steam instead of roast.
  • Roast the carrots until they're tender: The carrots are done roasting when they're tender when pierced with a fork. The roasting time will depend on the size of the carrots and how thick they were cut.
  • Make the honey mustard sauce while the carrots are roasting: This will save you time and ensure that the sauce is ready when the carrots are done.
  • Serve the carrots immediately: The honey mustard carrots are best served immediately after they're roasted. This is when they're at their most flavorful.
