ROASTED PORK TENDERLOIN WITH HONEY MUSTARD SAUCE

Roasted Pork Tenderloin With Honey Mustard Sauce image

Delicate and lean, pork tenderloin is an excellent cut that can be roasted whole or sliced into medallions. This recipe will allow you to prepare the rest of the meal while the tenderloin is roasting in the oven. I like to serve this with sauteed apple slices, sweet potato cakes and haricotes vert with walnuts.

Categories     main-dish

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 9

1 cup honey
2 tablespoons ancho powder, plus more for seasoning the pork
1 tablespoon Dijon mustard
Pinch of chile de arbol
Kosher salt and freshly ground black pepper
1 1/2- to 2-pound pork tenderloin, trimmed of excess fat and silver skin
Canola oil, for searing
Finely diced chives, for garnish
Thinly sliced scallions, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Whisk together the honey, 2 tablespoons ancho, the mustard and chile de arbol in a small bowl until smooth then season with salt and pepper. Set aside. (If you can make this glaze at least 30 minutes before using, it will be more flavorful.)
  • Remove the pork from the refrigerator 30 minutes before cooking. Season the pork on both sides with salt, pepper and ancho powder. Heat a few tablespoons of oil in a large ovenproof skillet over high heat until it shimmers. Add the pork and cook on all sides until golden brown and a crust has formed, about 12 minutes total. Brush both sides with some of the glaze.
  • Transfer the skillet to the oven and roast until an instant-read thermometer inserted into the center registers 140 degrees F, about 12 minutes.
  • Brush the top with the glaze several times while roasting. Remove to a cutting board and brush the top of the pork with more glaze. Let rest for 10 minutes then cut into thick slices. Garnish with the chives and scallions and serve.

GRILLED OR PAN ROASTED PORK TENDERLOIN IN HONEY LIME CHIPOTLE MARINADE RECIPE - (4.6/5)

Grilled or Pan Roasted Pork Tenderloin in Honey Lime Chipotle Marinade Recipe - (4.6/5) image

Provided by kayjayjohnson

Number Of Ingredients 10

2 lbs pork tenderloin (2 small tenderloins)
1 cup lime juice, about 8 juicy limes
zest from 2 limes
1/2 cup honey
1 tbsp kosher salt
1 tsp garlic powder
2 chipotle chiles in adobo sauce, chopped
1 tbsp adobo sauce (from canned chilies)
peanut oil, or other high temperature oil
cilantro

Steps:

  • Trim tenderloins of fat and silver skin as much as possible. Place in a large ziploc bag or other container to marinate. In a bowl combine lime juice, zest, honey, salt, and garlic powder. Stir to combine, then pour half over tenderloins, reserving half for sauce. To tenderloins add chiles and adobo sauce. Seal and marinade in fridge. About 30 minutes before you are ready to cook, remove pork from fridge and allow to come to room temperature. Preheat oven to 425°F. In a large, heavy oven-proof skillet (like a cast iron skillet), heat enough oil to coat over medium high temperature. Remove tenderloins from marinade and sear in hot skillet on all sides. Place the skillet in the oven and roast tenderloins for about 15 min. Check temperature with an instant read thermometer. Remove pork from the oven at approximately 140-145, cover pork in skillet with foil. Let rest on the counter for 5-10 minutes or until temperature rises to 150. Remove pork to a cutting board, pour reserved lime juice mixture into skillet with meat juices and heat on high. Allow sauce to reduce and thicken slightly, then pour over sliced pork tenderloins. If you don't have enough sauce or it thickens too much you can add a little water and continue simmering it until it is the quantity and thickness you want. Garnish with freshly chopped cilantro. If you choose to grill, start at step 5 and grill your tenderloins about 15 minutes. Remove from the grill to a platter at 140°F. Pour reserved lime juice mixture over meat and cover with foil. Allow to rest 10 minutes. Then slice, garnish with cilantro and serve.

BOURBON AND HONEY SMOKE-ROASTED PORK TENDERLOIN

Bourbon and Honey Smoke-Roasted Pork Tenderloin image

A recipe I am posting for the Pacific Islands for ZWT. This sounds delicious and I love grilling recipes. It has common ingredients that are used in recipes for Hawaii.

Categories     Pork

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 12

3 pork tenderloin
1 cup olive oil
1/2 cup Bourbon
3 tablespoons honey
1/2 cup lemon juice
1 tablespoon minced garlic
1 1/2 tablespoons gingerroot, peeled and grated
1/4 cup soy sauce
1/2 cup onion, thinly sliced
2 tablespoons sage, coarsely chopped
2 teaspoons black pepper
1 teaspoon salt

Steps:

  • Combine all marinade ingredients; blend well. The marinade for this dish can be prepared a day in advance; marinating should go on for 24 hours.
  • Lay the pork tenderloins in a ceramic or glass dish and pour marinade over them. Turn the tenderloins several times during the 24 hours that they are marinating in the refrigerator. When ready to cook, pat the pork dry.
  • Preheat charcoal in an outdoor grill and soak the wood chips in water for 30 minutes. Add the chips to the hot coals. Roast the pork evenly for about 40 minutes, until its internal temperature is 165°F If pork is to be eaten hot, allow it to sit on the edge of the grill for 10 minutes or so after it is cooked so that the juices can be drawn back into the meat.

Tips:

  • Choose a high-quality pork tenderloin: Look for a tenderloin that is firm to the touch and has a consistent color.
  • Trim the pork tenderloin: Remove any silver skin or excess fat from the tenderloin.
  • Marinate the pork tenderloin: Marinating the tenderloin helps to infuse it with flavor and keep it moist during cooking. You can use a simple marinade made with olive oil, herbs, and spices, or you can try a more complex marinade with ingredients like honey, Dijon mustard, or balsamic vinegar.
  • Cook the pork tenderloin to the proper temperature: The internal temperature of the pork tenderloin should reach 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, or 165 degrees Fahrenheit for well-done.
  • Let the pork tenderloin rest before slicing: Letting the pork tenderloin rest for a few minutes before slicing helps to redistribute the juices and keep the meat moist.
  • Serve the pork tenderloin with your favorite sides: Honey-roasted pork tenderloin can be served with a variety of sides, such as roasted vegetables, mashed potatoes, or a simple salad. You can also drizzle the pork tenderloin with the pan juices or a flavorful sauce.
