3 pounds chicken drumsticks (bone in, with skin)
2 tablespoon olive oil
1 tablespoon sesame oil
5 tablespoon honey
¼ cup soy sauce (low sodium)
3 cloves garlic (minced)
1 teaspoon ginger (freshly grated, ginger powder works as well, about 1/2 tsp)
¼ teaspoon pepper (freshly ground)
1 tablespoon parsley (chopped, for garnish)

Steps:

  • Prepare the chicken: In a 9x13-inch casserole dish, whisk all the ingredients together, excluding the chicken. Add chicken and toss making sure each piece is coated with the marinade. Next, cover with plastic wrap and marinate for a couple hours. I kept mine in the fridge overnight.
  • Preheat the oven: To 375°F degrees.
  • Bake the chicken: Remove the plastic wrap and transfer the dish to the oven. Bake the drumsticks for 45 minutes or until a meat thermometer registers 175°F. Make sure to turn them over half way through. This way they will get nice color all around.
  • Garnish and serve: Aim for garnishing the chicken with parsley and serve with the additional sauce.

2 tablespoons olive oil
1 tablespoon sesame oil
1/3 cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons lime juice
1/3 cup honey
4-6 cloves garlic, minced
1/4 teaspoon ground ginger
1/4 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon pepper
4-5 pounds chicken drumsticks

Steps:

  • Place the chicken drumsticks in a large zip-top bag.
  • In a medium bowl, whisk together the ingredients for the marinade. Pour over the chicken and seal the bag.

1 kg (2lbs) chicken drumsticks
½ cup soy sauce
½ cup hoisin sauce
1/3 cup honey
2 tbsp lemon juice
2 garlic cloves (crushed )
½ tsp chilli flakes
sesame seeds (to serve )
spring onion (to serve )

Steps:

  • Preheat the oven to 220°C/430°F.
  • Whisk together the soy sauce, Hoisin, honey, lemon juice, crushed garlic and chilli flakes. Taste and adjust the seasoning by adding more soy, honey or lemon juice.
  • Place the chicken in a suitable marinating dish and pour over the marinade. Make sure the chicken is completely covered.
  • Cover with plastic wrap and allow to marinade for at least 30 minutes but up to 24 hours in the fridge.
  • Transfer the chicken to a sheet pan and spoon over one third of the marinade. Place in the oven and bake for 15-20 minutes until cooked through.
  • Pour the remaining marinade into a saucepan and reduce until thick and sticky (the consistency of honey is good).
  • Remove the chicken from the oven and switch on the oven's broiler.
  • Glaze the chicken then place back in the oven and allow to caramelize for a few minutes. Repeat this a few more times until the chicken is sticky and caramelized.
  • Remove from the oven and scatter over sesame seeds and spring onion then serve.

Sea salt and black pepper
1 tablespoon sesame or olive oil
¼ cup tablespoon honey
⅓ cup tablespoon soy sauce
1 medium onion (sliced)

1 red chili
3 tablespoons honey
½ cup soy sauce
sesame seed

Steps:

  • In a mixing bowl, combine the garlic, ginger, chili, honey, and soy sauce.
  • Mix in the chicken drumsticks.
  • Cover with cling film and leave to marinate in the fridge for 4-6 hours, or overnight.

This is out of "The Backyard Barbecue Cookbook" We don't really care for drumsticks so I used this on skinless chicken breasts. Worked great. I have it marked "excellent!" in the book. You can add a little chili sauce if you prefer it hotter. Hope you enjoy! Cooking time does include 1 hour marinating.

1/3 cup soy sauce
2 garlic cloves, crushed
1 small onion, grated
1/2 teaspoon white pepper
1 tablespoon honey
1/4 cup green ginger wine (I use sherry) or 1/4 cup sherry wine (I use sherry)
12 chicken drumsticks

Steps:

  • Combine the soy sauce, garlic, onion, pepper, honey and ginger wine or sherry in a small pan, stir over a low heat until the honey softens and the ingredients are thoroughly mixed.
  • Remove the skin from the drumsticks and score through the flesh at 3/4 inch intervals.
  • Pour the marinade over the prepared chicken and allow to marinate for 1 hour.
  • Remove the drumsticks from the marinade and barbecue over a preheated, oiled gill with the hood down for 20-25 minutes, turning occasionally until the chicken is tender and juices are clear.
