2 cups 2% milk

  • Preheat oven to 450°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. 4 tablespoons cornstarch
¾ cup white sugar
4 tablespoons butter, melted
2 ¼ cups half-and-half cream

2 1/2 cups unbleached all-purpose flour
1 teaspoon kosher salt
1 teaspoon sugar
2 sticks (1 cup) cold unsalted butter, cut into small pieces
1/4 to 1/2 cup ice water
1/3 cup unbleached all-purpose flour, plus more for work surface
1/2 stick (4 tablespoons) unsalted butter
1 cup whole milk
1 cup heavy cream
1 cup sugar
1 teaspoon pure vanilla extract

Steps:

  • Make the Pate Brisee: Pulse flour, salt, and sugar in a food processor (or whisk together by hand in a bowl). Add butter and pulse (or quickly cut in with a pastry blender or your fingertips) until mixture resembles coarse meal, with some larger pieces remaining. Drizzle 1/4 cup water over mixture.
