1 cup flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
20 chicken wings or 20 chicken drumsticks
1/2 cup butter or 1/2 cup light butter
1/2 cup hot sauce
1/4 teaspoon black pepper
1/4 teaspoon garlic powder

Steps:

  • Combine flour, salt, cayenne pepper, and paprika in bowl.
  • Coat chicken pieces in dry mixture.
  • Reserve leftover mixture.
  • Refrigerate coated chicken at least 1 hour.
  • Coat chicken in leftover flour mixture.
  • In a saucepan, heat butter, hot sauce, pepper, and garlic powder just until butter melts, then keep warm.
  • Deep fry chicken, 10 pieces at a time, in 375 degree oil for 13 minutes.
  • Drain chicken on paper towels.
  • Immediately place chicken in Tupperware bowl.
  • Pour half the hot sauce mixture over chicken (first 10 pieces).
  • Cover and toss to coat.
  • Repeat with second batch of chicken.
  • Wings can be frozen and reheated in 400 degree oven for 10 minutes.
  • NOTES : Use ranch or blue cheese dressing as a dip for these fabulous wings.

1/2 cup Tabasco sauce, plus
2 tbs. Tabasco sauce
3 tbs. Light Brown Sugar
3/4 tsp. Paprika
3/4 tsp. Salt
1 tbs. Balsamic Vinegar
3/8 tsp. Cayenne Pepper
2 tbs. Chili Sauce

Steps:

  • Simply mix all the ingredients together very well. Dunk, dip or soak your cooked wings in this sauce. You can re-fry wings after they have been dipped in sauce, and then re-dip for an extra crisp. Serve with ranch or bleu cheese dressing.

4 cups vegetable oil for frying
¼ cup butter
5 tablespoons Buffalo wing sauce
1 tablespoon distilled white vinegar
4 pounds chicken wings, tips removed and wings cut in half at joint

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Melt butter in a skillet over low heat. Stir wing sauce and vinegar into melted butter until fully incorporated and heated through.
  • Working in batches, cook chicken wings in hot oil until no longer pink at the bone and the juices run clear, about 10 minutes.
