Steps:

1 cup rice (uncooked)
2 cinnamon sticks, broken into 3 pieces each
2 cups soymilk
1 (14 ounce) can sweetened condensed milk
1/2 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • Combine rice and cinnamon stick pieces in large bowl.
  • Stir in 12 cups of water. Let stand (room temperature) 6-8 hours.
  • Without disturbing rice on bottom, pour most of the water into another contaciner; reserve.
  • Remove cinnamon from rice mixture and reserve.
  • Add milk, condensed milk, sugar and vanilla to rice. Stir to mix.
  • Process in blender or food processor, working in batches, until as smooth as possible.
  • Stir mixture into reserved water. Return cinnamon pieces to mixture & chill.
  • Remove cinnamon sticks. Shake vigorously and serve in tall ice-filled glasses.
  • Garnish each glass with ground cinnamon.

2 cinnamon sticks
2 cups uncooked white rice
1 cup almonds
1 (14 ounce) can sweetened condensed milk
6 cups ice

Steps:

  • Bring 4 cups water to a boil. Add cinnamon sticks and let steep for 10 minutes.
  • Combine rice and almonds in a blender; blend to the consistency of sand. Transfer to a bowl and mix in cinnamon water. Cover and let sit for 6 hours.

1 cup uncooked white long-grain rice
5 cups water
½ cup milk
½ tablespoon vanilla extract
½ tablespoon ground cinnamon
⅔ cup white sugar

Steps:

  • Pour the rice and water into the bowl of a blender; blend until the rice just begins to break up, about 1 minute. Let rice and water stand at room temperature for a minimum of 3 hours.
  • Strain the rice water into a pitcher and discard the rice. Stir the milk, vanilla, cinnamon, and sugar into the rice water. Chill and stir before serving over ice.

1 cup long grain rice, rinsed
2 quarts water
1 cinnamon stick, broken into pieces
1 teaspoon vanilla
½ cup white sugar

Steps:

  • In a large saucepan, combine rice, water and cinnamon stick. Set aside for 3 hours.
  • After 3 hours, bring to a boil, reduce heat, and simmer for 30 minutes. Allow to cool.
