1 cup dry long-grain rice
½ cup sliced almonds (or chopped)
1 whole cinnamon stick
6-8 cups water
14 ounce sweetened condensed milk
12 ounce evaporated milk
1 teaspoon vanilla extract
¼ teaspoon salt

Steps:

  • Bring 4 cups of water to a boil (in a kettle or a sauce pan).
  • In a large heat-safe bowl add the dry rice, almonds, cinnamon stick, and salt. Pour the boiling water over the rice mixture. Stir well. Then cover and refrigerate for at least 2 hours. (Could be overnight.)
  • Pour the rice mixture into the blender, including the cinnamon stick. Puree until very smooth.
  • Set a fine mesh strainer (sieve) over a 10-cup measuring pitcher. Pour the rice mixture into the strainer. Allow the liquid to pour through, removing any remaining debris.
  • Stir in the sweetened condensed milk, evaporated milk, and vanilla extract. Add additional cold water, until you have 9-10 cups for horchata total. (9 cups for extra-thick horchata. My kids like it a little thinner.)
  • Chill until ready to use. Stir before serving. Serve over ice as-is, or with a shot of rum.

1/2 cup uncooked white rice
1 cup water
1 cup almond milk (OR coconut milk)
2 cinnamon sticks
3/4 tsp ground cinnamon
pinch salt
4 cup whole milk
1 1/2 tsp vanilla extract
1/3 cup pure cane sugar (We like Zulka Morena)

Steps:

  • In a medium size pot, combine the rice, water, almond milk, cinnamon sticks, cinnamon, and salt, bring to a boil. Reduce the heat to a low simmer, cover, and allow to cook for 25 minutes. Remove from heat and allow the mixture to cool to room temperature.
  • Remove the cinnamon sticks and add the rice mixture to a blender along with the remaining ingredients. Blend on high for 1 to 3 minutes until very smooth.
  • If you prefer a smooth consistency, pour over a mesh sieve into a large pitcher or pour in as-is. Chill until ready to serve.

I got this recipe from a friend from work, and she got it from a Mexican restaurant. This is in other words "rice water" it tastes like a rice pudding drink.The original recipe requires you to use actual rice, but this is a fast, refreshing version. The rice flour can be found at your local grocery store in the hispanic isle. Tip: I like to use the pitcher to mix everything well with a spoon and the put the finished drink in an empty milk gallon container and give it all a good shake.

1 (14 ounce) can sweetened condensed milk
1/2 cup of goya brand rice flour (or more)
2 teaspoons vanilla extract
1 teaspoon cinnamon
