HOT ARTICHOKE PARMESAN DIP
A friend of mine from my high school Spanish class made this dip as part of their presentation. Believe me, the girl got an A+! It took me years to track down this hot dish, and I finally did. This recipe is awesome with hot tortilla or Pita chips. Great for game day.

Steps:
- 1. In large bowl, pour in artichoke hearts, with juice. Add 1 package of cream cheese, softened and broken into parts, to make it easier to mix.
- 2. Add 8 oz of mayonnaise (one small jar) to bowl and stir. Add one can of green chilies. Mild or hot depending on your tastes.
- 3. Add one half cup of grated Parmesan cheese to mixture, then with large spatula, stir well. Scrape bottom as you go along to get all ingredients mixed in well.
- 4. Set oven to 350 degrees. Pour mixture into medium sized , oven proof casserole dish. If you have chunks of cream cheese in mixture, don't worry, it will melt during baking. Then take the rest 1/2 cup of Parmesan cheese and spread it on top of mixture.
- 5. Bake in oven for 35 minutes until it comes out gold and bubbly. It will be too hot to eat at first, so let it cool for 10 minutes or so. Serve it warm with your favorite chips (Tortilla works best. Especially if their just out of the oven), Bread or vegetables.
Tips:
- Use fresh artichokes. Fresh artichokes have a better flavor and texture than canned or frozen artichokes.
- Cook the artichokes properly. Artichokes should be cooked until they are tender but still have a slight bite to them. Overcooked artichokes will be mushy.
- Use a good quality Parmesan cheese. The quality of the Parmesan cheese you use will greatly affect the flavor of the dip. Use a Parmesan cheese that is aged for at least 12 months.
- Don't be afraid to experiment with different ingredients. You can add other ingredients to the dip, such as cooked bacon, chopped sun-dried tomatoes, or roasted red peppers.
- Serve the dip immediately. Hot artichoke Parmesan dip is best served immediately after it is made. The dip will thicken as it cools, so if you need to make it ahead of time, reheat it gently over low heat before serving.
Conclusion:
Hot artichoke Parmesan dip is a delicious and easy-to-make appetizer that is perfect for parties and gatherings. It is also a great way to use up leftover artichokes. With a few simple ingredients and a little bit of time, you can create a creamy, cheesy, and flavorful dip that everyone will love.
