HOT CORN DIP WITH CRISPY TORTILLA CHIPS

Here's a different type of dip recipe. You can use frozen corn if need be. If you use canned corn (ugh).. please be sure to drain and rinse well to get that funky taste out of it. I always add more jalapeño peppers. Recipe courtesy Emeril Lagasse, 2001

Tips:

  • Choose the right type of corn: Fresh corn on the cob is ideal for this dip, but you can also use frozen or canned corn. If using frozen corn, thaw it completely before using. If using canned corn, drain and rinse it well.
  • Roast the corn: Roasting the corn gives it a smoky, caramelized flavor that enhances the dip. You can roast the corn in the oven or on the grill. If roasting in the oven, preheat the oven to 400°F (200°C) and roast the corn for 15-20 minutes, or until it is slightly charred. If grilling, preheat the grill to medium-high heat and grill the corn for 10-12 minutes, or until it is slightly charred.
  • Use a good quality cheese: The cheese is a key ingredient in this dip, so it's important to use a good quality cheese that melts well. A sharp cheddar cheese or a pepper jack cheese are both good choices.
  • Add some spices: A little bit of spice can go a long way in this dip. Try adding some chili powder, cumin, or paprika to taste.
  • Serve the dip with crispy tortilla chips: The crispy tortilla chips are the perfect way to scoop up this delicious dip. You can either buy tortilla chips from the store or make your own.

Conclusion:

This hot corn dip with crispy tortilla chips is a delicious and easy-to-make appetizer that is perfect for any occasion. It's sure to be a hit with your friends and family. So next time you're looking for a quick and easy snack, give this recipe a try.
