WARM TORTELLINI SALAD

Warm Tortellini Salad image

Delicious and simple--you can have this on the table in mere minutes. Use bottled vinaigrette or make your own. I used a double recipe of Bergy's Lemon Garlic Dijon Vinaigrette (recipe #96361)--it was fantastic and complimented the dish perfectly. I served topped with freshly ground black pepper and freshly grated Parmigiano-Reggiano.

TORTELLINI SALAD

Tortellini Salad image

A simple tortellini salad with veggies and a vinaigrette dressing. Simple, and tastes great warm or cold! I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like! This is great as a meal in itself or as a side dish.

Categories     One Dish Meal

Time 15m

Yield 2-4 serving(s)

Number Of Ingredients 8

1 (8 ounce) package frozen cheese tortellini
1/2 white onions or 1/2 red onion
1/2 green bell pepper
1 (4 1/4 ounce) can black olives
1 -2 cup crumbled feta or 1 -2 cup shredded mozzarella cheese
1/4 cup olive oil
1/4 cup red wine vinegar
salt & pepper

Steps:

  • Start by defrosting/cooking the cheese tortellini in a pot of boiling water. The tortellini are ready when they float in the water and are heated through. Move them to a colander to drain, and set aside.
  • Drain and coarsely chop the black olives (you can use pre-chopped olives to save time). Peel the onion, de-seed the pepper, and coarsely chop them as well.
  • Place chopped vegetables and cheese tortellini in a large bowl. Sprinkle desired amount of cheese (feta or mozzarella) and the olive oil and red wine vinegar over the vegetables and tortellini, and then toss it all together. If you are using mozzarella cheese, it will probably melt a bit, which is fine.
  • Give the salad a taste, and add salt and pepper as desired. You may also want to add more olive oil or vinegar, depending on your preference. You can eat the salad right away, warm, or save it for later and eat it cold. The flavors will meld and (in my opinion) get better with time, so make sure you make enough for leftovers!

Tips:

  • Choose the right tortellini. For the best flavor and texture, use a high-quality tortellini that is made with fresh ingredients. Look for tortellini that is filled with a variety of meats, cheeses, and vegetables.
  • Cook the tortellini properly. To ensure that the tortellini is cooked through but still tender, cook it according to the package directions. Be sure to not overcook the tortellini, as this will make it tough and chewy.
  • Use a variety of vegetables. To add color, flavor, and nutrients to your salad, use a variety of vegetables. Some good choices include tomatoes, cucumbers, bell peppers, onions, and artichoke hearts.
  • Make a flavorful dressing. The dressing is what will bring all the flavors of the salad together. Be sure to use a dressing that is flavorful and complements the other ingredients in the salad.
  • Serve the salad immediately. Tortellini salad is best served immediately after it is made. This will prevent the tortellini from becoming soggy and the vegetables from wilting.

Conclusion:

Tortellini salad is a delicious and easy-to-make dish that is perfect for any occasion. With its variety of flavors and textures, tortellini salad is sure to please everyone at your table. So next time you're looking for a quick and easy meal, give tortellini salad a try!
