Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 9

1/2 lb lean ground beef (recipe didn't give a amount)
1 medium onion
6 ounces zucchini, shredded
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Italian cheese blend
1/2 cup Bisquick reduced-fat baking mix
1 cup milk
2 eggs

Steps:

  • Turn oven to 400.
  • Spray a 9-inch Pan.
  • Scrambled the ground beef, then saute the onion with the zucchini for 6 minutes, season with salt and pepper.
  • Spread the mixture in the pan, put the cheese on top.
  • Mix the bisquick, milk and eggs then pour over the ground beef mixture.
  • Cook for 25 minutes.

Tips:

  • Use a variety of zucchini. Different types of zucchini have different flavors and textures, so experiment to find the ones you like best. For example, yellow zucchini is sweeter than green zucchini, and pattypan squash has a more delicate flavor.
  • Don't overcook the zucchini. Overcooked zucchini is mushy and bland. Cook it just until it is tender-crisp.
  • Use a good quality cheese. The cheese is one of the main ingredients in this dish, so it's important to use a cheese that you enjoy. A sharp cheddar or Parmesan cheese will add a lot of flavor.
  • Don't be afraid to experiment. There are many different ways to make this dish. You can add different vegetables, herbs, and spices to create your own unique version.

Conclusion:

Zucchini tomato cheese pie is a delicious and easy-to-make dish that is perfect for any occasion. It's a great way to use up leftover zucchini, and it's also a healthy and satisfying meal. With a few simple tips, you can make a zucchini tomato cheese pie that is sure to impress your family and friends.
