Creamed coconut is not the same as coconut cream. Creamed coconut is a very concentrated coconut extract without the water. It is basically coconut cream concentrate, and can be made into coconut cream by mixing it with water, or into coconut milk by mixing it with a larger amount of water

6 -8 ounces mushrooms, thickly sliced
3 1/2 cups stock or 3 1/2 cups water
3 tomatoes, chopped
1/2-1 teaspoon salt

  • Return beef to pan, cover and simmer until beef is tender about 1-1 1/2h.
  • Stir in chopped creamed coconut and ground almonds into the curry then cover the pan and cook gently 3 minutes.
  • Meanwhile heat the remaining oil in a skillet add pepper, scallion, fry gently you will want them to be tender crisp. Add cumin cook 1 minute. Spoon over curry and serve immediately.

Tips:

  • Choose the right cut of beef. A tougher cut, like chuck or brisket, will benefit from the long cooking time in this recipe and become meltingly tender. However, if you prefer a leaner cut, you can use flank steak or skirt steak. Just be sure to slice it thinly against the grain so that it doesn't become tough.
  • Use a variety of mushrooms. Different mushrooms will add different flavors and textures to your curry. For example, cremini mushrooms have a mild, earthy flavor, while shiitake mushrooms have a more woodsy flavor. You could also use a mix of wild mushrooms, such as chanterelles or morels.
  • Don't overcrowd the pan. When browning the beef and mushrooms, be sure to do it in batches so that they don't steam. This will help to develop a nice, caramelized crust on the beef and mushrooms.
  • Use a good quality curry paste. The curry paste is the base of the flavor in this dish, so it's important to use a good quality one. Look for a paste that is made with fresh, flavorful ingredients and that has a good balance of spices.
  • Adjust the heat level to your liking. This recipe calls for a medium curry paste, but you can adjust the heat level to your liking by using a milder or hotter paste. You can also add a bit of cayenne pepper or chili powder to taste.

Conclusion:

This Indian beef and mushroom curry is a delicious and easy-to-make dish that is perfect for a weeknight meal. The beef is tender and flavorful, the mushrooms are earthy and savory, and the curry sauce is rich and creamy. Serve it with rice or naan bread for a complete meal.
