GARAM MASALA CHICKEN WINGS

Provided by Mark Bittman

Categories     easy, appetizer

Time 45m

Number Of Ingredients 6

3 pounds of chicken wings
4 tablespoons melted butter
1 tablespoon garam masala
1 tablespoon minced ginger
1 teaspoon minced garlic
some salt

Steps:

  • Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
  • Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
  • Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
  • While the wings cook, combine 4 tablespoons melted butter, 1 tablespoon garam masala, 1 tablespoon minced ginger, 1 teaspoon minced garlic and some salt in a large bowl. (It should be the texture of a thin paste.)
  • When the wings are cooked, add them to the bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill, and cook, uncovered, turning as necessary, until they're nicely browned on both sides.

Tips for Making the Best Indian Masala Chicken Wings:

  • Choose the right chicken wings. Look for plump, evenly sized wings with smooth, unblemished skin. Avoid wings that are bruised or have any signs of freezer burn.
  • Marinate the chicken wings for at least 30 minutes. This allows the flavors of the marinade to penetrate the chicken and makes them more flavorful. If you're short on time, you can marinate the wings for as little as 15 minutes, but the longer you marinate them, the better they'll taste.
  • Use a high-quality garam masala. This is a blend of spices that is essential for giving Indian dishes their characteristic flavor. Look for a garam masala that is made with fresh, whole spices that have been ground into a powder.
  • Don't overcrowd the pan when cooking the chicken wings. If you do, they won't cook evenly and they'll end up being soggy. Cook the wings in batches if necessary.
  • Serve the chicken wings hot with your favorite dipping sauce. Some popular options include mint chutney, cilantro chutney, or tamarind sauce.

Conclusion:

Indian masala chicken wings are a delicious and easy-to-make appetizer or main course. They're perfect for parties or potlucks, and they're sure to be a hit with everyone who tries them.
