Time 1h45m

Yield 4

Number Of Ingredients 11

3 ½ cups all-purpose flour
1 teaspoon salt
1 cup water
1 (.25 ounce) package active dry yeast
1 pinch white sugar
¼ cup flour for dusting
2 cups pizza sauce
20 slices fresh mozzarella cheese
20 leaves fresh basil
olive oil
sea salt to taste

Steps:

  • Stir flour and 1 teaspoon salt in a bowl. Set aside.
  • Mix water, yeast, and sugar in a large bowl. Let stand until yeast begins to form a creamy foam, about 5 minutes.
  • Stir half the flour mixture into yeast mixture until no dry spots remain. Stir in remaining flour, 1/2 cup at a time, mixing well after each addition. When dough pulls together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, then place dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 1 hour. Punch dough down, divide into 4 equal pieces, and form each into a ball.
  • Preheat oven with a pizza stone to 500 degrees F (260 degrees C).
  • Stretch out and pat 1 dough ball to form a circle 10 to 12 inches in diameter. Place dough on a lightly floured pizza peel. Top with 1/2 cup of tomato sauce and spread to cover within an inch of the edge of the dough. Arrange 5 slices of mozzarella cheese on top of the tomato sauce, then place 5 basil leaves on top. Drizzle pizza with 1 tablespoon olive oil and sprinkle with sea salt to taste. Repeat for 3 remaining dough balls.
  • Slide each pizza onto the pizza stone in the preheated oven. Bake until cheese is bubbly and the underside of the crust is golden brown, 5 to 7 minutes.

INDIAN PIZZA

Time 2h25m

Yield One 12-inch pizza

Number Of Ingredients 21

1 cup warm water
1 teaspoon yeast
1 teaspoon sugar
2 cups flour, plus 2 tablespoons for kneading
1 teaspoon salt
1 teaspoon ajwain
Olive oil
3 tablespoons olive oil
1 onion, roughly chopped
2 cloves garlic, chopped
2 tablespoons chopped ginger
1 tablespoon garam masala
1 teaspoon turmeric
1/2 teaspoon smoked paprika
A pinch of salt and pepper
1 pound fresh spinach leaves
1/4 cup chopped fresh cilantro
3 green onions, sliced
1 cup yellow cherry tomatoes, cut in half
1 cup shredded mozzarella
Special equipment: a 12-inch pizza pan or a pizza stone

Steps:

  • For the dough: Pour the warm water into a large bowl, add the yeast and sugar and stir to dissolve. Let sit until the yeast appears foamy, about 15 minutes. Add 2 cups flour, the salt and ajwain and stir with a fork until it comes together in a shaggy ball. Knead it a few times in the bowl to incorporate the flour on the sides of the bowl, and then turn it out onto a work surface. Continue to knead the dough for a few minutes, adding the 2 tablespoons flour if it seems wet and sticky. Do not add a lot of extra flour here as the dough should be very soft and pliable. Pour a little olive oil into a clean bowl and smear it around the edges. Rub it over the surface of the dough and then place the dough in the bowl. Cover with a towel and let rise in a warm place for 1 hour.
  • Preheat the oven to 425 degrees F.
  • For the pizza: Put the olive oil into a large skillet and add the onions, garlic and ginger. Saute until golden and soft, and then add the garam masala, turmeric, smoked paprika and salt and pepper. Add the spinach and stir until completely wilted. Let cool slightly, and then add to a food processor and puree until smooth.
  • When the dough is ready, pick it up and begin to stretch and pull it into a circle. Press it onto a pizza pan, stretching the dough to the edges. Spread the spinach mixture evenly over the entire pizza. Sprinkle the cilantro and green onions over it, and then add the tomato halves. Cover with the shredded cheese.
  • Place the pizza on the bottom rack of the oven and bake until the crust is golden and crispy and the cheese is bubbling, 25 to 30 minutes. Slice into wedges and serve.

Tips:

  • Using ripe, flavorful tomatoes is essential for a delicious sauce. If you don't have fresh tomatoes, you can use canned diced tomatoes, but be sure to drain them well and remove any excess liquid.
  • Fresh herbs, such as basil, oregano, and thyme, add a burst of flavor to the sauce. If you don't have fresh herbs, you can use dried herbs, but use half the amount.
  • To make the pizza crust, you can use a pre-made crust or make your own. If you're making your own crust, be sure to let it rise for at least an hour before baking.
  • When assembling the pizza, be sure to spread the sauce evenly over the crust and top it with plenty of cheese. You can also add other toppings, such as cooked chicken, vegetables, or meats.
  • Bake the pizza in a hot oven until the crust is golden brown and the cheese is melted and bubbly.

Conclusion:

Indian-spiced tomato margherita pizza is a delicious and easy-to-make dish that is perfect for a quick weeknight meal or a fun weekend party. With its flavorful sauce, crispy crust, and gooey cheese, this pizza is sure to be a hit with everyone who tries it.
