No-Bake Lime Cheesecake image

Being from the Sunshine State, I love any recipe containing citrus. This one, featuring lime, is quick to mix up and disappears almost as fast. Substitute orange juice, zest and slices for the lime to get another great cheesecake variation.

Time 40m

Number Of Ingredients 9

250g gingernut biscuits
125g unsalted butter, melted
600g cream cheese
100g icing sugar
3 limes, zested (save the juice to use in the glaze)
300ml double cream, whipped to soft peaks
4 gelatine leaves
100g caster sugar
6 limes, juiced and pared, and zest of 3 to 6 limes, zest pared off on 3 with a peeler and all juiced

Steps:

  • Whizz the biscuits to crumbs in a food processor, or tip into a food bag and crush with a rolling pin. Mix with the melted butter, then press into the base of a 20cm springform cake tin. Chill in the fridge until needed.
  • Put the cream cheese, icing sugar and lime zest in a bowl, then beat with an electric mixer until smooth. Tip in the double cream and continue beating until completely combined. Spoon the cream mixture onto the biscuit base, working from the edges inwards and making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon. Leave to set in the fridge while you make the glaze.
  • Soak the gelatine leaves in cold water. Tip the other ingredients for the glaze into a saucepan with 200ml water. Cook gently until the sugar has dissolved and the syrup is simmering. Drain and squeeze the gelatine of any excess water, then stir into the hot syrup to dissolve. Leave everything to infuse until just warm, then sieve the syrup into a jug. When cooled, pour over the cheesecake and put in the fridge overnight to set. Carefully remove the cake from tin before serving.

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 7

20 chocolate chip cookies
1/4 cup unsalted butter, at room temperature
3 (8 ounce) packages cream cheese, at room temperature
3/4 cup sugar
4 large eggs
2 large egg yolks
4 limes, juice of

Steps:

  • Preheat the oven to 350 degrees F. Using large pieces of heavy-duty aluminum foil, wrap the bottom and sides of a 9-inch springform pan two or three times to ensure that it's water proof as you will be baking the cheesecake in a water bath; set aside.
  • Place the cookies in a food processor and process the cookies until they're finely ground (about 30 seconds).
  • Add the butter and pulse 10 to 15 times.
  • Dump the cookie crumbs into the springform pan and using your hands, spread the cookie crumbs in an even layer across the bottom of the pan only (not up the sides). Place the prepared crust in the refrigerator while you prepare the filling.
  • Place the cream cheese in a food processor or mixer and mix until smooth. Add the sugar and mix well.
  • Add the eggs and the egg yolks one at a time and mix well after each addition.
  • Add the lime juice and mix well.
  • Pour the cheesecake batter into the prepared pan. It will be liquidy.
  • Place the cheesecake inside a large, shallow roasting pan. Pour hot water inside the pan until it reaches half-way up the sides of the springform pan with the cheesecake. Carefully put the cheesecake in the oven. Bake the cheesecake for 50 minutes and then check it. The cheesecake is done when it's set, but not firmly set so that it's still jiggly in the middle (the cheesecake will set further as it cools).
  • Remove the cheesecake from the oven and immediately remove it from the water bath. Carefully peel off the aluminum foil and set the cheesecake to cool on a wire rack.
  • Once cooled, place the cheesecake in the refrigerator until ready to serve.

Tips:

  • Use fresh limes. Fresh limes have a brighter, more intense flavor than bottled lime juice. If you can, try to find key limes, which are smaller and have a more floral flavor than regular limes.
  • Zest your limes before juicing them. Lime zest adds a burst of citrus flavor to the cheesecake. Be sure to zest the limes before you juice them, as the zest is located in the outer layer of the rind.
  • Use full-fat cream cheese. Full-fat cream cheese will give your cheesecake a richer, creamier texture. If you use low-fat or non-fat cream cheese, your cheesecake will be less flavorful and may have a crumbly texture.
  • Don't overbeat the cream cheese. Overbeating the cream cheese can cause it to become grainy. Beat the cream cheese until it is smooth and creamy, but do not overbeat it.
  • Bake the cheesecake in a water bath. Baking the cheesecake in a water bath helps to prevent it from cracking. Place the cheesecake pan inside a larger pan filled with hot water. The water bath will create a humid environment that will help the cheesecake to bake evenly.
  • Chill the cheesecake before serving. Cheesecake needs to be chilled for at least four hours before serving. This will allow the cheesecake to set and develop its full flavor.

Conclusion:

Individual lime cheesecakes are a delicious and refreshing treat that are perfect for any occasion. They are easy to make and can be customized to your liking. Whether you prefer a classic lime cheesecake or a more unique flavor combination, you are sure to find a recipe that you will love.
