1 bottle (1 liter) vodka
1 tangerine, preferably organic, washed well
5 cardamom pods, lightly crushed
1 vanilla bean, split lengthwise
3 unsprayed spruce or other pine sprigs (about 2 inches long)
5 juniper berries, lightly crushed

Steps:

  • For the tangerine version:Remove peel from tangerine in long strips using a vegetable peeler, making sure not to include any white pith. Add peel directly to bottle of vodka. For the vanilla-cardamom version: Add cardamom pods and vanilla bean directly to bottle of vodka. For the pine and juniper version: Add pine sprigs and juniper berries directly to bottle of vodka.
  • Let vodka stand at room temperature in a cool, dark place for 2 to 3 days, depending on desired strength of flavor. Strain; discard solids.

High-quality vodka
1 lemon
1 lime
1 orange
High-quality vodka
Whole peppers, such as jalapeno, habanero, or poblano (hot) , or bell peppers or sweet Italian (mild)

Steps:

  • Wash and dry the lemon, lime, and orange. Using a zester or a strong vegetable peeler, peel the skin of each citrus fruit to create narrow ribbons.;
  • When handling peppers, it's best to use rubber gloves; some varieties can sting or even burn the skin. Wash and dry the peppers and slit them lengthwise into slivers. For stronger flavor, leave the seeds intact. For milder flavor, remove. Avoid getting the juice near eyes.
  • For Both Recipes: Clean bottle in warm sudsy water. Rinse and dry. Gently place the citrus peels or peppers into the gift bottle, pour in the vodka, and cover the top of the bottle. (Do not seal at this point) Place the bottle in the refrigerator and let the ingredients steep for at least 3 hours - 2 days is better. Before giving, top off the bottle with additional vodka. (The infusion ingredients will soak up some of the vodka.) Seal the bottle with a cork or glass bottle stopper and seal with sealing wax. Tie a thin metal wire or fabric ribbon around the top of the neck, if so desired.

FLAVORED VODKAS

There are three cardinal rules of drinking in Russia. The first is that you NEVER drink alone. To sit by yourself in front of an open bottle is considered abnormal and antisocial. Even the self professed drunkard abides by this rule, coming together as a small group (na troikh - for three) and chipping in for half a liter and some sausage or a bite of herring. The second cardinal rule of Russian drinking is to NEVER drink without eating something immediately after. The zakuska or "little bite" takes on a literal meaning. The "little bite" should be salty (to incourage more drinking!) such as pickles, olives, or herring. The third rule is to NEVER sip your vodka, and NEVER add ice or tonic. Although you can purchase commercial flavored vodkas, it's more fun to make your own, which you can do so in just a few minutes. I prefer to use a real Russian vodka, such as Stolichnaya. In a pinch I will use Absolut. Make at least two or three flavors and serve in cut crystal or glass decanters. A 750 ml bottle of vodka makes about 16 1 1/2 ounce drinks.

1 (750 ml) bottle Stolichnaya vodka
6 -8 pieces bison grass (available at herb stores)
1 (750 ml) bottle Stolichnaya vodka
4 teaspoons pink peppercorns
1 (750 ml) bottle Stolichnaya vodka
1 tablespoon coriander seed, lightly crushed
1 (750 ml) bottle Stolichnaya vodka
1 tablespoon anise seed
1 (750 ml) bottle Stolichnaya vodka

Steps:

  • To make a lemon flavored vodka (Limonnaya):.
  • Make sure no white is left on the rind, as it will make the taste bitter.
  • Add the zest to the vodka and infuse for at least 4 hours, but no more than 12 at room temperature. Strain and chill.
  • To make Buffalo Grass Vodka (Zubrovka):.
  • Add the buffalo grass to the vodka and infuse for at least 8 hours. Remove all but two blades of the buffalo grass. Chill.
  • To make Pepper Vodka (Pertzovka):.
  • Add the peppercorns to the vodka and infuse for at least 8 hours, 3 days maximum. Strain and chill.
  • To make Coriander Vodka (Koriandrovaya):.
  • Add the coriander seeds to the vodka and infuse for at least 6 hours, maximum 24 hours. Strain and chill.
  • To make Anise Vodka(Anisovaya):.
  • Add the aniseed to the vodka and infuse for 3 to 5 hours. Strain and chill.
