12 bacon strips, chopped
2 whole garlic bulbs
2 tablespoons Worcestershire sauce
2 teaspoons pepper
1 teaspoon salt
5 pounds ground beef
12 slices Swiss cheese, quartered
2 large onions, halved and thinly sliced
12 kaiser rolls, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 1/2 cup drippings., Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with 1 tablespoon bacon drippings. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Squeeze softened garlic into a large bowl; add the Worcestershire sauce, pepper and salt. Crumble beef over mixture and mix well. Shape into 24 patties. Layer 2 pieces of cheese, bacon and remaining cheese onto the center of each of 12 patties. Top with remaining patties and press edges firmly to seal., In a large skillet, cook onions in remaining reserved drippings over medium heat for 15-20 minutes or until golden brown, stirring occasionally., Meanwhile, grill burgers, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. 4 scallions, cleaned and trimmed
Extra-virgin olive oil, for drizzling
1 1/3 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon steak seasoning blend or coarse salt and black pepper
1/2 pound extra sharp white cheddar cheese, crumbled
1 cup mayonnaise or reduced fat mayonnaise
1 teaspoon ground cumin
Salt and pepper
4 crusty Kaiser rolls, split
4 leaves crisp romaine lettuce

Steps:

  • Preheat grill pan over high heat.
  • In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.
  • Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.

This was inspired by a Rachael Ray recipe I read called "Inside-Out Turkey Bacon Cheeseburgers". This one is make with ground beef and regular bacon, with a couple other variations.

6 slices bacon, chopped
2 lbs lean ground beef
salt & freshly ground black pepper
1 teaspoon spicy ground mustard powder
3/4 cup sharp cheddar cheese, shredded
1/2 head lettuce, chopped
1 tomatoes, sliced
4 kosher dill pickles, chopped
1 tablespoon extra virgin olive oil

Steps:

  • Arrange the bacon in a large nonstick skillet and heat over medium heat. Slowly crisp up the bacon, cooking for 3 or 4 minutes on each side. Remove the bacon from the skillet, and, when cool, chop.
  • Add the EVOO to the remaining drippings and set aside.
  • Place the lean ground beef in a large mixing bowl, season with salt and fresh ground black pepper, and mix in the mustard powder.
  • Divide the meat into 4 equal portions. Shape each portion into a burger, making a well in the center.
  • Fill the well of each with one quarter of the crisp bacon pieces and 2 tablespoons of the cheese. Carefully form the burger around the cheese and bacon filling, making sure the filling is completely covered.
  • Return the skillet you cooked the bacon in to medium-high heat.

1/4 - cup shredded Cheddar cheese. 1/4 - cup shredded Gruyere or mortsarella. 1 - pound lean ground sirolin or chuck...80/20%-fat. 1 - Tbsp Worcestershire sauce. 1-1/2 - teaspoons paprika.
1/4 -tsp. minced fresh garlic. 1/4 - tsp. each freshly ground white & black/peppers.
Salt to taste.

Steps:

  • 1.Preheat grill to medium-high or preheat the broiler. 2. Combine Cheddar and Gruyere in a small bowl. 3. Gently mix beef, don't pack your burger patties to tight. Lightly put your burger patties together. 4. Worcestershire, minced garlic, paprika and pepper in a large bowl. Preferably with your hands, without overworking. Shape into 8 thin, 4-inch-wide patties. Mound 2 tablespoons of the cheese mixture on each of 4 patties, leaving a 1/2-inch border. Cover each with one of the remaining patties.
