CRUMBLE TOPPING:
4 ounces butter, plus extra for greasing
5 ounces soft light brown sugar
2 large free range eggs
7 ounces plain flour, sifted
1 tablespoon baking powder
1 pinch salt
1 teaspoon ground cinnamon
11 ounces peeled, cored and sliced cooking apple (Shouldn't be more than one large apple)
2 ounces vanilla sugar (or substitute caster sugar)
2 ounces plain flour
2 ounces butter

Steps:

  • Preheat the oven to 360°F, grease and line a 8-inch cake tin with a removable base. With an electric hand mixer, beat the butter and sugar in a large bowl until pale. Add the eggs, one at a time, mixing until they are incorporated. In a separate bowl, mix together flour, baking powder, salt, and cinnamon. Fold the dry ingredients into the wet and mix until you have a thick cake batter. Stir in the apple slices and pour the batter into the cake tin. The batter will be thick, so use a spatula to spread across the base of the tin. 3/4 cup sugar, plus
1 tablespoon sugar
1/2 teaspoon cinnamon
1/2 cup all-purpose flour
4 tablespoons unsalted butter, softened

Steps:

  • Preheat the oven to 350°F.
  • Line an 8-inch pie pan or heatproof baking dish with the pie dough; prick the dough with the tines of a fork.
  • In a bowl, mix together the apples, ¼ cup of the sugar, and ¼ teaspoon of the cinnamon.
  • In a second bowl, mix together the flour, ½ cup of the sugar, and the unsalted butter; work these ingredients together with a fork until you have a crumbly mixture.

FILLING:
1/3 c water
2 Tbsp irish whiskey
1/2 c golden raisins
1 tsp vanilla extract
4-5 large tart apples, peeled, cored and sliced (granny smiths)
1/3 c granulated sugar
1/2 tsp ground cinnamon
1/2 tsp ground ginger
CRUMBLE:
1 c all purpose flour
1/2 c packed light brown sugar
6 Tbsp butter
1 c oatmeal, uncooked (not instant)
CREAM SAUCE:
1 c heavy cream (whipping)
2 Tbsp honey
2 Tbsp irish whiskey

Steps:

  • 1. To make the filling, in a small saucepan over medium heat, bring the water and whiskey to a boil. Stir in the raisins and vanilla. Remove from the heat, cover, and let stand for 1 hour, or until the raisins have absorbed most of the liquid.
  • 2. Preheat the oven to 375°F. Butter an 8- or 9-inch square glass baking dish.
  • 3. In a large bowl, toss the apples with the sugar, cinnamon and ginger. Stir in the raisins and cooking liquid and arrange in the prepared pan.
