1/3 cup flour
1/4 cup butter
1 1/2 lbs red potatoes, peeled and cubed
1 (12 ounce) bottle beer, guinness extra stout
1 (10 1/2 ounce) can condensed beef broth
2 cups peeled and sliced carrots
2 cups peeled and sliced parsnips
1 1/2 cups water
1 large onion, cubed
2 cups cabbage, coarsely chopped 1-inch slices

Steps:

  • Cut away any large pieces of fat from corned beef and cut meat into 1-inch cubes; dredge well in flour. Melt butter in a pan. Add corned beef (including any excess flour); cook over medium-high heat, stirring frequently, until browned on all sides.

  • Add cabbage and cook for 10 minutes more.

Tips:

  • Use a Dutch oven or other heavy pot with a tight-fitting lid. This will help to evenly distribute the heat and prevent the stew from boiling over.
  • Brown the beef in batches before adding it to the pot. This will help to develop more flavor.
  • Add a variety of vegetables to the stew, such as carrots, potatoes, onions, and celery. This will make the stew more hearty and nutritious.
  • Season the stew with salt, pepper, and other herbs and spices to taste. You can also add a splash of Guinness beer for extra flavor.
  • Simmer the stew for at least 1 hour, or until the beef is tender and the vegetables are cooked through.
  • Serve the stew with a side of crusty bread or mashed potatoes.
