2 tablespoons butter
1 cup onion, chopped
2 garlics, minced
1 lb ground beef
2 teaspoons dried parsley
1 teaspoon dried rosemary
1 teaspoon dried thyme
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon worcestershire sauce
3 tablespoons tomato paste
2 tablespoons all purpose flour
1 cup beef broth, or red wine
1 cup mixed peas and carrots, frozen or canned
1 cup diced tomato, canned, drained and rinsed
½ cup frozen corn kernels, or canned
½ cup shredded sharp cheddar cheese
2 cups chicken broth
4 tablespoons butter
¼ teaspoon salt
½ cup sour cream
1 ½ cups potato flakes
2 green onions, stems sliced very thin
½ teaspoon pepper, garnish

Steps:

  • Preheat the oven to 400°F.
  • Melt butter in a skillet over medium-high heat. Cook the onions for 5 minutes. Then, add garlic and cook for 1 minute.
  • Set onions and garlic aside and in the same skillet, add ground meat. Cook and stir for 6-8 minutes until thoroughly browned. Drain & rinse meat in a colander.
  • Add meat back in the skillet over medium-low heat. Stir in parsley, rosemary, thyme, salt, pepper, and Worcestershire sauce. Then, stir in flour, and tomato paste. Stir until completely well incorporated
  • Stir in broth (or wine), peas, carrots, tomatoes and corn. Simmer for 5 minutes.
  • Evenly smooth meat mixture onto bottom of the skillet (or press into the bottom of a 9x9"inch baking dish). Sprinkle cheddar cheese over the top.
  • Potatoes: Heat broth, butter, and salt in a bowl in the microwave until hot. Stir in sour cream and potato flakes and mix with a fork. Let sit until liquid has been fully absorbed. (Note: the potatoes need to be thick to pipe perfect peaks.
  • Use a "star tip" on a piping bag (or a Ziploc bag with corner snipped). Fill bag and pipe potatoes into skillet or baking dish, covering the meat.
  • Sprinkle chopped onions & pepper on top.
  • Bake uncovered for 30 minutes.
  • Serve hot.

2 tomatoes (chopped)
1 cup beef stock or 1 cup bouillon
1/2 teaspoon thyme
1/4 teaspoon sage

5 medium potatoes (boiled and mashed)
1 tablespoon butter or 1 tablespoon bacon fat

Steps:

  • Pre-heat oven to 375 degrees.
  • Brown the beef in oil.
  • Remove from pan and set aside.
  • Drain most of the accumulated fat from the pan.
  • Sauté onions until tender, and then add chopped tomatoes and cook for 2-3 minutes.
  • Add broth and stir in herbs and seasonings.
  • Return brown meat to skillet and continue cooking for 5 minutes.
  • Transfer all ingredients to an ovenproof casserole.
  • Top with mashed potatoes (scoring them with a fork.) Dot with butter and bake uncovered in 375-degree oven for 30-40 minutes.

Posting this per a request. I've said it once and I'll say it again there is nothing Irish about Corned Beef and Cabbage, but Shepherd's Pie has always been and still is a staple of traditional Irish cooking. This is a really easy, but tasty recipe that the whole family will enjoy. It's nutritionally sound with all the major food groups represented. The British use lamb in their Shepherd's Pie, but we've always used beef. Do whatever you prefer or even try turkey if you're watching fat content. This sauce is lovely and rich and should go well with any meat. You can use fresh or leftover mashed potato. I usually use 3 tbsp of ketchup instead of the 2tbsp of tomato paste as I like the hint of sweetness, but traditionally the paste would be more sound! You can also make individual pies which are always a hit with the kids. This freezes beautifully too, so make two and save one! Just let it defrost and glaze with the egg and pop into the oven as directed. Enjoy! :)

2 ounces butter
2 ounces flour
1/2 liter milk
5 ounces grated cheese

  • Place cod fillets in the bottom of a 8x8x2 buttered oven dish.Place dish on a cookie sheet pan because there will be sauce that escapes and runs down the outside of the casserole dish.
  • Make a cheese sauce by mixing 2 oz each of butter and flour, 1/2 liter of milk and 3 1/2 oz grated cheese cook till slightly thickened: pour over fish.
  • Top with mashed potatoes sprinkle grated cheese over them and dot with butter.
  • Bake in a hot oven (450 F) for 25-30 minutes, until the potatoes are golden brown.
  • Optional -- I just made this again and put in 2 sliced scallions into the cheese sauce after it was cooked{step #2}.Garnish with scallions.

1 (14 ounce) can condensed milk

7 bananas, not over ripened, do not want them mushy
2 -4 tablespoons lemon juice, to prevent banana's from browning sauce
2 cups whipping cream
1/4 cup confectioners' sugar
2 -3 tablespoons extra strong coffee
1 large chocolate bar (I used Ghiraradelli chocolate toffee bar)

Steps:

  • 1 Heat oven to 400 degree's. make crust. Combine cracker crumbs with sugar. Add melted butter. Combine well,and press in to a 9 inch spring form pan bottom,and going up half way up sides of pan. Bake for 10 minutes. Remove from oven and cool.
  • 2 make caramel- Melt butter in saucepan . Add brown sugar. Cook on high heat. Bring to a boil stirring constantly.Make sure sugar dissolves.
  • 3 Add the condensed milk,and combine well. Bring to a boil. Set timer for 1 minute and 30 seconds. Boil on high heat stirring constantly.Mixture should get thickened.If not thickened. Cook a little longer.
  • 4 pour half of the caramel on to bottom of crust you made. Slice 3 banana's and toss with a little lemon juice. Place slices in caramel. Pour the rest of the caramel on top. Now slice 3 more banana's and toss with lemon juice. Place in top of the caramel. Refrigerate until caramel sets.
  • 5 make cream topping - Beat the whipping cream with confection sugar and coffee. Beat until soft peaks. Fold in 1 sliced banana. Top pie with cream. Shave chocolate bar on top. Add walnut's on top if desired. Decorate how you wish. Keep refrigerated.

Sadly my mum is no longer with us, but her legendary apple pie lives on in my memory. I promise you will love this pie!

1 ½ cups all-purpose flour
¾ cup cake flour
½ teaspoon salt
1 tablespoon white sugar
1 cup unsalted butter
3 tablespoons shortening
¼ cup sour cream
⅛ teaspoon lemon juice
5 large Granny Smith apples - peeled, cored and sliced
½ cup white sugar
2 tablespoons all-purpose flour
½ tablespoon ground nutmeg
⅛ teaspoon lemon juice
1 egg, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pie pan.
  • To Make Crust: In a large bowl, combine flours, salt and sugar. Cut in butter and shortening until coarse crumbs are formed. Mix in sour cream and lemon juice. Keep mixing until dough forms a ball; dough may be slightly lumpy, this is fine. Wrap dough ball in plastic wrap and allow to chill for 1 hour.
  • Once chilled, take dough out of refrigerator and cut it in half; keep one half covered and in the refrigerator. Roll dough to 1/8 of an inch. To lift pie shell, roll dough around rolling pin and then unroll into pie pan. Trim overhanging edges of pie crust.
  • To Make Filling: Place apples into pie shell. In a small bowl, combine sugar, flour and nutmeg; mix thoroughly. Sprinkle mixture over apples. Squirt lemon juice over apples. Place pie in refrigerator while top crust is rolled out.
  • Remove pie from refrigerator. Brush outer edge of bottom crust with beaten egg. Place second crust on top of pie; crimp pie shell edges together. Brush entire top crust with egg and cut 4 steam slots into it.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 45 minutes, or until golden brown. Allow pie to completely cool before serving. Serve warm with whipped cream or vanilla ice cream.

1 1/2 c graham cracker crumbs
1/3 c granulated sugar
1/2 c butter, softened
1/4 c unsweetened cocoa powder
CARAMEL
1 can(s) condensed milk (14 oz)
1/3 c brown sugar packed
6 1/4 Tbsp butter
TOPPINGS
7 bananas not over ripened, do not want them mushy.
2-4 Tbsp lemon juice to prevent bananas from browning
WHIPPED CREAM
4 oz cream cheese
2 c whipping cream
1/4 c confectioners' sugar
2-3 Tbsp brewed extra strong coffee (you can use double strength instant mixed with water. Then remove 3 Tbsp for whipped cream.)

2 medium potatoes, cut in 1-inch chunks
2 medium carrots, halved, quartered lengthwise
4 tablespoons unsalted butter
8 small white onions (frozen or from a jar)
1/2 teaspoon sugar
1/4 cup white wine
3 1/2 tablespoons all-purpose flour
1 cup hot beef stock or 1 cup broth
1 cup heavy cream
1 1/2 lbs leftover prime rib roast beef, cut into 1-inch chunks
0.5 (5 ounce) package frozen peas, defrosted and drained
1 pinch cayenne pepper
1/8 teaspoon ground allspice
salt & freshly ground black pepper
1 tablespoon chopped chives
1 tablespoon chopped flat leaf parsley
1 egg yolk, beaten with 1 t. water

Steps:

  • Preheat oven to 450 degrees.
  • Cook potatoes and carrots together in boiling salted water until just tender. Drain; set aside.
  • In a small skillet, melt 1 T. of the butter and saute onions over medium heat until lightly brown. Lower heat. Sprinkle onions with sugar; toss lightly. Add white wine; cook until almost all liquid is absorbed. Remove from heat; set aside.
  • In a large saucepan, over low heat, melt remaining 3 T. butter. Add flour to make a roux and whisk for 3 minutes. Add the stock, whisking constantly. Mixture should thicken considerably. Raise heat slightly. Add cream, stirring constantly. Lower heat. Cook and stir 1 minute longer.
  • Add potatoes, carrots, onions, beef, peas, cayenne, and allspice. Add salt and pepper to taste. Mix well; remove from heat.
  • Spoon mixture into a 2-quart casserole dish. Sprinkle with parsley and chives.
  • Roll out pie dough and place over top of casserole. Build up the edges high and pinch into rim of dish. Cut a slit in the top to allow steam to escape. Brush egg yolk over the crust. Bake in preheated 450 degree oven for 10 minutes; reduce heat to 375 degrees. Bake 20 minutes longer. Let stand 5 minutes before serving.

Update: Recently I decided to bring this to a party and wanted it to be more like finger food, so I used a biscuit cutter to make little pie shells and tucked them gently into a mini-muffin tin (using a fork to poke the bottom), then I placed 4 chocolate chips in each one and poured the rest of the mix over them until nearly full. They were a HUGE hit!

1/2 liter milk

Steps:

  • Place fish filets in the bottom of a round oven dish.
  • Make a cheese sauce with the butter, flour, milk and grated cheese and pour over fish.
  • Make scone dough by rubbing the butter into the flour with baking powder and pinch of salt.
  • Add grated cheese and drop egg yolk into the mixture and add enough milk to make a workable dough.
  • Roll out to a thickness of 1/2 inch and cut into small rounds with a scone cutter.
  • Drop these rounds on top of the fish mixture so that they just about cover the surface and then glaze them with a little milk.
  • Sprinkle some more grated cheese over them and bake at 450F degrees for 25-30 minutes or until the scones are golden brown.

1 9 in.baked pastry shell

150g 16 digestive biscuits or graham cracker crumbs (1 1/3 c)
100g butter melted (7 1/4 Tbsp)
FOR PIE FILLING
1 tin of evaporated milk, 12 oz. can
50g butter (3 3/4 Tbsp)
50g brown sugar (1/4 C packed)
1 Tbsp golden syrup
3 bananas, sliced
2 Tbsp 7-up or lemonade mixed in to 3 sliced bananas
STABILIZED WHIPPED CREAM FOR TOP OF PIE
1 tsp gelatin, unflavoured
4 tsp cold water
1 c fresh heavy whipping cream
1/4 c sifted icing sugar (confectioners' sugar)
FOR DECORATION ON TOP
chocolate sprinkles

Steps:

  • 1. First, make the base by melting the butter and pouring it onto the crumbled digestive biscuit.
  • 2. Stir well.
  • 3. Press into a 8-inch loose bottom spring back base tin.
  • 4. Leave to chill in the fridge until you make the caramel filling.
  • 5. To make the caramel sauce, melt over medium heat in a pot with butter, syrup, sugar, and the contents of the evaporated milk.
  • 6. Stirring continuously, use a wooden spoon to clean the sides of the saucepan. When the butter has melted and the mixture is bubbling slowly but steadily, start timing 10 to 12 minutes as caramel can burn easily.
  • 7. Stir into the corners and all around the bottom steadily. When the mixture has coloured slightly and started to thickened remove from heat. Leave to cool a little.
  • 8. In a small bowl, slice the bananas.
  • 9. Pour over the top a little lemonade or lemon-lime soda so the bananas keep their yellowish colour.
  • 10. To make the cream, in a small pot combine gelatin and cold water let stand until it thickens.
  • 11. Place over a low heat stirring constantly just until the gelatin dissolves. Remove from the heat and let cool (do not allow to set).
  • 12. Whip the fresh heavy cream with the sifted icing sugar with a hand-held electric mixer until thick.
  • 13. Now, slowing beating, add the cooled gelatin to your whipping cream.
  • 14. Add to your digestive base the caramel sauce.
  • 15. Then the sliced bananas spreading them out evenly.
  • 16. Add to that the whipped cream. Try to make a swirl effect just for decoration with your cream.
  • 17. Just sprinkle some chocolate sprinkles over the top of the banoffee pie.
