- In a small saucepan, combine the first nine ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Cool to room temperature. , Pour 1/2 cup marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate overnight. Transfer remaining marinade to a small bowl; cover and refrigerate for basting. , Coat grill rack with cooking spray before starting the grill. Drain and discard marinade. Grill chicken, covered, over medium heat for 4-7 minutes on each side or until a thermometer reads 170°, basting occasionally with reserved marinade.

ISLAND GRILLED JERK CHICKEN

I'm always looking for new grill recipes that stick to the basics (picky family) with some subtle new flavors (trying to branch out the picky family). The family loved it, the leftovers, while few, reheated well! Served this over rice with a green veggie side.

Steps:
- Wash the chicken and pat it dry. Cut each breast in half lengthwise, then each half into two strips (can do more if the breast is really thick/wide, looking for about a 1/2 inch strip or even a little less).
- Place the strips in a storage bag.
- Combine the soy sauce and next eight ingredients in a blender; blend until smooth.
- It's going to be an icky green color, don't fear as I initially did!
- Pour mixture into the bag over the chicken, seal and marinate in the fridge for up to 24 hours; squish around a few times over the marinating period.
- Preheat grill to medium high heat.
- Thread chicken strips on skewers, place on grill over direct heat, close lid.
- Grill on each side until done (approx. 5 minutes per side).
ISLAND JERK CHICKEN

- For Jerk, blend all ingredients. Divide the chicken and marinade between two resealable plastic bags. Seal the bags and press out any excess air. Turn bags over several times to distribute the marinade around the breasts. Pleace in the refrigerator for 6 - 9 hours or up to one day. Remove breasts from bags and grill or pan sear over medium heat until well browned on both sides. Adjust the heat to low until the internal temp reaches 165'. For salsa: Combine all ingredients and refrigerate. Remove from fridge one hour before serving.
