MASCARPONE APPLE PIE

With a granola crust and mascarpone cheese topping, this is not your ordinary apple pie. A cool, creamy slice is the perfect ending to a holiday meal (or any other meal!). I actually use homemade granola instead of crushed granola bars :-)

2 cups crushed oat and honey granola bars
1 cup unsweetened coconut

Time 11h45m

Yield 12 to 16 servings

Number Of Ingredients 12

1 cup slivered almonds, lightly toasted
2/3 cup graham cracker crumbs
3 tablespoons sugar
1 tablespoon unsalted butter, melted
2 (8-ounce) packages cream cheese, room temperature
2 (8-ounce) containers mascarpone cheese, room temperature
1 1/4 cups sugar
2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
4 large eggs, room temperature
1/2 cup chocolate-hazelnut spread (recommended: Nutella)
1/4 cup whipping cream

Steps:

  • For the crust: Preheat oven to 350 degrees F.
  • Tightly wrap the outside of a 9-inch diameter springform pan with 2 3/4-inch-high sides with 3 layers of heavy-duty foil. Finely grind the almonds, cracker crumbs, and sugar in a food processor. Add the butter and process until moist crumbs form. Press the almond mixture onto the bottom of the prepared pan (not on the sides of the pan). Bake the crust until it is set and beginning to brown, about 12 minutes. Cool. Decrease the oven temperature to 325 degrees F.
  • For the filling: Using an electric mixer, beat the cream cheese, mascarpone cheese, and sugar in a large bowl until smooth, occasionally scraping down the sides of the bowl with a rubber spatula. Beat in the lemon juice and vanilla. Add the eggs, 1 at a time, beating just until blended after each addition.
  • Pour the cheese mixture over the crust in the pan. Place the springform pan in a large roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan. Bake until the center of the cheesecake moves slightly when the pan is gently shaken, about 1 hour 5 minutes (the cake will become firm when it is cold). Transfer the cake to a rack; cool for 1 hour. Refrigerate until the cheesecake is cold, at least 8 hours and up to 2 days.
  • For the topping: Combine the chocolate-hazelnut spread and cream in a small bowl. Heat in the microwave until warm, stirring every 20 seconds to blend, about 1 minute.
  • Cut the cake into wedges. Drizzle the chocolate sauce over the wedges and serve.

1 cup rolled oats
½ cup brown sugar
¼ cup all-purpose flour
½ cup slivered almonds
¼ teaspoon ground cinnamon
¼ cup butter, cubed
1 (9 inch) single pie crust

2 teaspoons ground cinnamon
½ cup caramel sauce

Tips:

  • Choose the right apples: For this recipe, it's best to use a firm, tart apple like Granny Smith or Honeycrisp. These apples will hold their shape well when baked and provide a nice contrast to the sweet mascarpone filling.
  • Don't overcook the apples: The apples should be tender but still have a little bit of bite to them. If you overcook them, they will become mushy and the pie will be less flavorful.
  • Use high-quality mascarpone cheese: Mascarpone cheese is the key ingredient in this pie, so it's important to use a good quality brand. Look for mascarpone that is thick and creamy, with a slightly tangy flavor.
  • Make sure the pie crust is well-chilled before baking: This will help to prevent the crust from shrinking and cracking. You can chill the pie crust in the refrigerator for at least 30 minutes before baking, or you can freeze it for up to 2 months.
  • Serve the pie warm or at room temperature: This pie is best served warm or at room temperature, so that the mascarpone filling is soft and creamy. You can also serve it with a dollop of whipped cream or a scoop of vanilla ice cream.

Conclusion:

This Italian apple mascarpone pie with almond topping is a delicious and easy-to-make dessert that is perfect for any occasion. The combination of tart apples, creamy mascarpone cheese, and crunchy almond topping is irresistible. So next time you're looking for a special treat, give this pie a try!
