1 bunch of fresh basil (washed and stemmed)
2 cups sugar
1 cup water
2 cups lemon juice (from about 12 to 15 lemons)
2 cups cold or sparkling water
Ice
Lemon twists (for garnish)

Steps:

  • In a saucepan combine the basil, sugar, and water and simmer until the sugar is dissolved, 5 minutes. Cool, strain the liquid, and discard the basil. Store the simple syrup in the refrigerator.
  • 2 Mix the lemon juice, 2 cups basil simple syrup, and 2 cups water together in a pitcher. Store in the refrigerator until ready to serve. Pour into ice-filled glasses and garnish with a lemon twist.

In my quest to find recipes to take advantage of the bumper crop of basil I have right now, I came across this one found in the May 2003 issue of Sunset magazine. This is very refreshing! It's especially fun if you have lots of different varieties of basil available to you.

1/2 cup rinsed lightly packed fresh basil leaf
3 tablespoons sugar
4 cups water
1/2 cup freshly squeezed lemon juice
1 sprig fresh basil

Steps:

  • In a 1 1/2 to 2 Qt glass bowl, combine basil leaves and sugar.
  • With a wooden spoon, crush leaves with sugar until thoroughly bruised;
  • add water and lemon juice,
  • Stir until sugar is dissolved, about 2 minutes;
  • Taste and add more sugar if desired.
  • Pour through a strainer into ice-filled glasses.
  • Garnish with sprigs of fresh basil.
  • *Note:The type of basil you use will contribute to the'personality' of this drink.
  • Dark purple basil tints the lemonade pink and has a milder flavor than green varieties.
  • Lemon basil adds a lemon-drop essence.
  • Cinnamon and Thai basils make this more spicy.

2 cups freshly squeezed lemon juice (i used 7 lemons, but they were all pretty juicy. 8-10 is probably a safe average bet)
basil simple syrup, cooled (recipe below)
3 cups of cold or sparkling water
lots of ice (i froze mine with basil leaves and lemon zest inside)
fresh basil leaves and lemon slices for garnish (optional)

Steps:

  • mix lemon juice, simple syrup, and water in a pitcher and serve in glasses filled with ice. basil simple syrup: 1 1/2 cups sugar 1 cup water 2 cups lightly packed basil 1 tablespoon lemon zest (optional) combine the water, sugar, and basil in a small saucepan and heat at medium-high until the liquid is clear and sugar granules are no longer visible, about 7 minutes. if using lemon zest, add to the syrup once it's off the heat. allow to cool, then strain out the zest and basil leaves. note: this is a tart lemonade, if you prefer a sweeter lemonade, i would increase the sugar in the simple syrup. the recipe also produces a strong lemonade, which is why it is served in glasses with lots of ice. enjoy! ♥

1 cup freshly grated parmesan
2 tablespoons chopped fresh basil
1/2 tablespoon grated lemon zest

Steps:

  • Preheat the oven to 400 degrees F. Mix the parmesan, basil and lemon zest in a bowl.
  • Transfer a heaping tablespoon of the cheese mixture to a silicone- or parchment-lined baking sheet and lightly pat down. (A silicone baking mat is highly recommended for this recipe.) Repeat with the remaining cheese mixture, spacing the spoonfuls about 1/2 inch apart. Bake 3 to 5 minutes, or until golden and crisp. Let cool, then use a flat spatula to remove.
