BLACK BEAN & ITALIAN SAUSAGE SOUP

Black Bean & Italian Sausage Soup image

This is one of my favourite soups-as-a-meal dish. It is very hearty and is a good comfort food on a cold day. This recipe is a great way to use Italian Sweet Sausage (hot sausage would be good too). Eden black soy beans can be used for the carb conscious--skip the optional rice or pasta addition.

Provided by Signlady

Categories     Clear Soup

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 10

3 slices bacon, chopped
1 onion, chopped in medium sized pieces
4 Italian sausages, removed from casings, broken up
2 small yellow peppers or 2 small orange peppers, chopped
4 cups chicken stock (I used 900ml container-low salt)
2 (14 ounce) cans black beans or 2 (14 ounce) cans black soybeans, drained and rinsed
1 teaspoon ground cumin
1 teaspoon garlic powder
salt, pepper, pepper flakes
left over rice (*optional-see note below) or pasta (*optional-see note below)

Steps:

  • In a large soup pot on medium heat, fry the bacon bits to get some fat to coat the bottom of the pan.
  • Add the garlic powder, chopped onion, chopped peppers, and Italian sausage broken up into chunks. Fry on medium heat until the sausage is no longer pink.
  • Add the chicken stock, 1/2 tsp of cumin and one can of black beans. Simmer covered for 30 minutes.
  • Use an immersion blender to blend some of the soup so that there are still lots of unblended chunks--about 10-15 seconds on high.
  • Add the other can of drained, rinsed beans and 1/2 tsp of cumin.
  • Season with salt, pepper and/or pepper flakes if you like it spicy.
  • Simmer for another 10 minutes.
  • *Serve with a dollop of sour cream if desired. I also serve it over a couple of tablespoons of leftover rice or pasta in each bowl to make it a hearty meal.

ITALIAN SAUSAGE, BEAN AND MACARONI SOUP

Italian Sausage, Bean and Macaroni Soup image

A family favorite for many years. This soup is even better if made a day ahead to blend flavors, just rewarm on top of the stove, and serve with crusty buns. You can add in precooked pasta, any kind you desire to the soup, in place of small uncooked pasta. You can use turkey sausage in place of the Italian sausage.

Cook until the vegetables are tender and the onion has turned translucent, about 7 minutes. Stir in the tomato paste until no lumps remain; pour in the red wine. Bring to a boil over high heat and cook until the liquid has reduced by half, stirring frequently to dissolve the brown bits from the bottom of the pan. Add the beef broth, black beans, and diced tomatoes. Reduce heat to medium-low, cover, and simmer 1 hour. Cut the cooled sausage into 1/2-inch thick slices. Stir the sausage into the soup along with the rotini pasta, spinach, and dried oregano. Simmer until the pasta is tender, 7 to 10 minutes. Stir in the chopped basil and season to taste with salt and pepper before serving.

CREAMY WHITE BEAN & ITALIAN SAUSAGE SOUP

Creamy White Bean & Italian Sausage Soup image

This recipe was in a little recipe pamphlet DH received in the mail. I added extra seasonings and increased the cooking times. I served it with hot crusty sourdough bread and it made a wonderful cold weather soup. As an added bonus using canned beans makes it a very quick and easy dish to put together. I like using the parmesean cheese and DH likes the extra "kick" of the crushed red peppers.

Number Of Ingredients 15

3 (15 1/2 ounce) cans white beans (not dried, I use Great Northern)
1 (1 lb) package bulk Italian sausage, casing removed
2 tablespoons vegetable oil
1 large onion, chopped
1 carrot, peeled and shredded
1 celery rib, diced
1 tablespoon minced garlic
2 (14 ounce) cans chicken broth
1 cup heavy whipping cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1/8 teaspoon ground cayenne pepper
grated parmesan cheese (optional)
crushed dried red pepper (optional)

  • Using a potato masher or the back of a spoon mash beans to a fairly smooth consistency then set aside.
  • In large skillet cook sausage over medium heat breaking up into small pieces until browned.
  • Remove sauage from skillet and place on paper towels to absorb grease.
  • In heavy dutch oven or stock pot heat oil over medium heat.
  • Add chopped onions, carrots and celery to hot oil and cook until softened, about 20-25 minutes.
  • Add broth, whole beans and minced garlic to vegetable mixture.

Tips:

  • Use dried beans: Dried beans are more flavorful and economical than canned beans. If you don't have time to soak them overnight, you can quick-soak them by bringing them to a boil in a pot of water, then removing them from the heat and letting them sit for an hour.
  • Use a variety of beans: Don't just stick to one type of bean. Using a variety of beans will give your soup a more complex flavor and texture.
  • Sauté your vegetables: Sautéing your vegetables before adding them to the soup will help them caramelize and develop their flavor.
  • Use a flavorful broth: The broth is the base of your soup, so make sure it's flavorful. You can use homemade broth, store-bought broth, or a combination of both.
  • Season your soup to taste: Season your soup with salt, pepper, and other herbs and spices to taste. Start with a small amount and add more as needed.
  • Let your soup simmer: Simmering your soup for at least 30 minutes will help the flavors meld together and develop.
  • Serve your soup with crusty bread or a salad: Crusty bread or a salad is the perfect accompaniment to a bowl of Italian bean soup.

Conclusion:

Italian bean soup is a hearty, flavorful, and economical soup that is perfect for a cold winter day. It's also a great way to use up leftover beans. With a few simple ingredients and a little bit of time, you can easily make a delicious pot of Italian bean soup that the whole family will enjoy.
