ITALIAN INN CHEESE SPREAD
This recipe is from the Italian Inn in Tulsa, OK. After over 40 years in business they closed their doors. They were famous for their cheese spread that was served before every entree with antipasto and fresh hot breadsticks. They sold as much of the cheese and breadsticks to go as eating in. The cheese is the key to this recipe, and they ordered it from Wisconsin.

Steps:
- 1. Dice up the green pepper and onion. I cut the beef into tiny pieces. I also use my mixer as I always double this recipe. Combine the meat and cheese and mix. Add as much onion to taste as you prefer. Add the green pepper for looks and taste. Make sure your veggies are small or it will not spread well. Chill and serve on Ritz crackers.
- 2. Carl Budding beef is found in your grocery store prepackaged deli meat section. I have never substituted with Hillshire Farms or anything else so I do no know if your flavors or amounts would be the same. Also the cracker is Ritz to have the result of an italian sandwich. If you have never had an italian you may find the cracker does not matter.
