5 Tablespoons olive oil
1/2 yellow onion, minced
1 whole garlic clove
1/2 cup fresh herbs: a mixture of: thyme, basil, rosemary, mint and sage
2 - 3 fresh artichoke hearts, thinly sliced (see instructions above)
juice of 1 lemon
6 - 7 asparagus stalks, with woody ends cut off
3 cups fresh arugula
2 cups fresh spinach or 1/2 cup frozen
4 eggs
salt and pepper
a few radicchio leaves (optional)

Steps:

  • Clean and prepare artichoke hearts as instructed above. Slice the hearts into thin slices and keep in ice water with lemon to retain color.Using a mortar and pestle or food processor, grind fresh herbs with 2 Tablespoons olive oil to form a paste.Heat 1 Tablespoon olive oil in a large saucepan and add garlic and onion. Cook on medium for 2-3 minutes until fragrant. Add artichoke hearts and asparagus. Cook for 5 minutes until artichoke is just soft. Remove garlic clove.Add herb paste, arugula and spinach. Stir well and heat for 3-4 more minutes until the greens are wilted.Remove from heat and add salt and freshly ground pepper to taste.Add beaten eggs and stir well.Heat 2 tablespoons of olive oil in a large cast iron saucepan and add frittata. Cook until bottom is set, about 2 - 3 minutes, making sure it does not get too brown on the bottom. Turn over and cook briefly until set, about 2 more minutes. Serve on a bed of radicchio. 12 large eggs
l/4 cup half & half
1 teaspoon salt
Fresh pepper
2 tablespoons butter
1 1/2# Ricotta cheese (drained overnight to remove liquid)
1 1/2 cups Romano cheese
8 ounces Mozzarella cheese
1/2# bacon
1# Italian sausage (remove casing and crumble)

Steps:

  • Preheat the broiler. Whisk the eggs, half & half, salt and pepper. Set aside. Cook sausage and bacon in 12" nonstick overproof skillet over medium heat. Drain fat and add butter. Coat sides of pan with the butter. Raise heat to medium-high. Add the cheeses. Cook for a few minutes until the eggs start to set. Reduce heat to medium-low and cook until the Frittata is almost set, about two minutes. Place the skillet under broiler. Broil until top is set and golden brown, about five minutes. Let the Frittata stand about two minutes. Using spatula, loosen the Frittata from skillet and slide onto a plate.

3 large eggs
3 tablespoons cold water
3 cups all-purpose flour, plus more for dusting
1 1/4 teaspoons kosher salt
12 tablespoons (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces, plus more for the pan
22.5 ounces full-fat ricotta cheese
1/2 teaspoon kosher salt
Freshly ground black pepper
7 large eggs
1 tablespoon olive oil
1 pound ground spicy or sweet sausage
8 ounces asparagus, sliced 1/2 inch thick
10 thin slices Genoa salami
10 thin slices capicola
8 thin slices provolone cheese

Steps:

  • For the dough: In a medium bowl, whisk together the eggs and water; set aside. In the bowl of a food processor, combine the flour and salt and pulse a couple of times. Add the chilled butter and pulse about 10 times until pea-size pieces remain. Add the egg mixture and pulse 15 to 20 times until a dough ball forms. Place the dough ball on a floured surface and knead until smooth and elastic, about 1 minute. Divide into 2 balls, wrap each ball with plastic wrap and rest in the fridge for at least 1 hour.
  • For the filling: While the dough is resting, whisk together the ricotta cheese, salt, some pepper and 6 of the eggs in a medium bowl and set aside. In a 10-inch skillet over medium heat, add the oil and brown the sausage, breaking up the pieces while it's cooking, 5 to 8 minutes. Drain the sausage on a paper towel-lined plate, leaving behind any fat. Add the asparagus and cook until beginning to soften, 4 to 5 minutes. Set aside.
  • Preheat the oven to 375 degrees F. Grease a 9-inch cake pan with butter.
  • On a well-floured counter, roll out each dough ball into a thin 14-inch circle. Cover one circle with plastic wrap until ready to use. Loosely roll the other dough circle around a rolling pin and unroll over the prepared cake pan, letting the excess hang over the side. Press the dough gently into the sides of the pan so there is no gap between the pan and the dough. Shingle the salami over the bottom of the dough, creating an even layer. Then, add the asparagus in an even layer on top of the salami. Next, add half of the egg mixture and spread it out evenly, then top with the capicola in an even layer. Layer in the sausage and top with the remaining egg mixture, then finally the provolone cheese.
  • Whisk the remaining egg with 1 tablespoon water and brush the outside rim of the dough with the egg wash. Add the remaining dough circle to the top of the pie and cut off the excess dough. Press both circles together to create a seal. Brush the remaining egg wash over the entire top and slice a couple slits in the top of the pie. Bake until golden brown, 45 to 55 minutes. Let stand 10 minutes before slicing.

4 ½ tablespoons extra virgin olive oil
1 salted butter

2 tablespoons fresh basil, chopped
6 large eggs
2 tablespoons half & half
½ teaspoon salt
1 teaspoon pepper
½ teaspoon adobo
1 tablespoon fresh basil
1 teaspoon parmesan cheese
¼ cup fresh mozzarella cheese, diced

  • On a small baking sheet, cut your potatoes into thin vertical segments (half-moon shapes).
  • Drizzle 2 tbsp olive oil over potatoes and season with 1 tbsp salt and 1 tbsp pepper.

  • Once well-beaten, pour your eggs into the frying pan (that holds the sauteed vegetables) and allow them to cover the entire circumference of the frying pan.
  • Next, place medium diced pieces of mozzarella throughout the frying pan, letting them slightly sink into the egg mixture, followed by adding in sprinkles of chopped basil.
  • Cook on a medium-low flame for 12-15 minutes.
