1 medium onion, thinly sliced
3 cloves garlic, thinly sliced

1/2 cup chopped fresh parsley
1 1/2 cups giardiniera (pickled vegetables), plus 3 tablespoons brine from the jar
4 ciabatta rolls, split open
4 ounces sharp provolone, thinly sliced
Hot sauce, for serving (optional)

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic and cook, stirring occasionally, until soft, about 3 more minutes. Season with salt and pepper, transfer to a large bowl and set aside.
  • Lightly pound the steak between 2 sheets of plastic wrap until about 1/8 inch thick. Heat the remaining 2 tablespoons olive oil in the same skillet over medium-high heat. Add the steak in batches and cook until browned, about 30 seconds per side; season with salt and pepper. Transfer the steak to the bowl with the onion and garlic. Add the parsley and giardiniera brine and toss to coat. Drizzle the cut sides of the rolls with olive oil. 3 (12 to 14-ounce) rib-eye steaks
4 ounces Gorgonzola, crumbled
1/2 cup sour cream
Salt and freshly ground black pepper
1 baguette (about 2 feet long), split lengthwise
2 cups lightly packed arugula

Steps:

  • Combine the vinegar, soy sauce, Worcestershire sauce, and mustard seeds in a large resealable plastic bag. Add the steaks and seal the bag. Refrigerate at least 30 minutes and up to 2 hours, turning the steaks occasionally.
  • Prepare the barbecue for medium-high heat or preheat a grill pan over medium-high heat. Drain the marinade from the steaks. Grill the steaks to desired doneness, about 6 minutes per side for medium-rare. Let the steaks rest for 10 minutes. Cut the steaks crosswise into thin slices.
  • Meanwhile, stir the cheese and sour cream in a small bowl to form a thick spread. Season the cheese mixture, to taste, with salt and pepper. 6 large garlic cloves, smashed
1/4 cup canola oil
2 tablespoons balsamic vinegar
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
2 teaspoons honey
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 pound top-round London broil
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk
1 cup grated aged Provolone
Kosher salt and freshly ground black pepper
1 bunch green onions, cleaned well
2 tablespoons olive oil
Salt and freshly ground black pepper
5 (6-inch long) French roll baguettes, halved lengthwise

Steps:

  • Mix all of the marinade ingredients together in a bowl and pour it into a large gallon-sized resealable plastic bag. Add the steak and turn to make sure it is completely covered by the marinade. Refrigerate for at least 2 hours and up to 12, turning the bag occasionally.
  • Melt the butter in a heavy bottomed saucepan over medium heat. Once melted add the flour and stir until it becomes a light blonde color. Slowly whisk in milk. Bring the milk up to a simmer while stirring. Once at a simmer, stir in the cheese, a handful at a time. Season with salt and pepper, to taste. Keep warm until ready to use.
  • Preheat the grill to medium-high heat.
  • Toss green onions in a bowl with olive oil, and salt and pepper, to taste.
  • Remove the steak from the marinade and let the excess drain off. Grill the steak for 5 to 7 minutes per side for medium-rare and about 8 to 10 minutes for medium. Remove the steak from the grill to a cutting board and allow it to rest for 10 minutes before slicing.
  • While the steak rests, put the green onions and baguettes on the grill. Cook the green onions until charred and soft, about 4 minutes, and toast the bread until golden.
  • To assemble, slice the steak, at a 45 degree angle, into very thin slices across the grain. Put some of the steak on the bottom of each roll, top with some grilled green onions, and smother with provolone cheese sauce. Cover with the top of the roll and serve.

1/2 cup olive tapenade
4 ounces sliced provolone
8 ounces low-moisture mozzarella (such as Polly-O), thinly sliced

1 jar (12 ounces) marinated artichoke hearts, drained and chopped
4 ounces thinly sliced spicy salami

1 lb round steak (1/4 inch thick)
meat tenderizer (I prefer Adolphs)
1/2 cup butter, melted
3 tablespoons bottled steak sauce
2 tablespoons green onions, sliced
1 1/2 tablespoons Worcestershire sauce
1/4 teaspoon salt
6 slices French bread (1 inch thick slices)

Steps:

  • Cut steak into 6 pieces and sprinkle generously with tenderizer, piercing with a fork.
  • Grease lightly and preheat griddle to 400 degrees.
  • Grill meat 2 to 3 minutes on each side; pepper to taste.
  • MAKE SAUCE by combining the butter through the salt and heating.
  • Toast the bread.
  • TO SERVE; dip one side of the toast, using a fork, quickly into the sauce; top with the steak and spoon the remaining sauce on the steaks.

1 green pepper, cut in slices
1 small onion, cut in slices
1 can mushroom
2 cups spaghetti sauce
1 tablespoon butter
3 cups shredded mozzarella cheese, cheeze
6 hoagie rolls

Steps:

  • Melt the butter in a skillet.
  • Saute the green pepper, onion, and mushrooms in the melted butter.
  • Add spaghetti sauce until the mixture is well coated and warm.
  • In separate skillet, fry the Steak Ums.
  • Be sure to drain the grease.
  • Mix the Steak Ums and Sauce mixture together.
  • Spoon onto a hoagie roll and top with mozarella cheese.
  • Microwave to melt the cheese, if necessary.

2 sirloin, skirt, or flank steaks (about 1 3/4 pounds each)
Extra-virgin olive oil, for brushing and drizzling
Coarse salt and freshly ground pepper
6 tomatoes, sliced 1/2 inch thick
2 large loaves semisoft Italian bread, halved lengthwise
Garnish: fresh basil and romaine lettuce leaves

Steps:

  • Let steaks stand at room temperature for 30 minutes. Heat grill to high. Brush grates with oil. Season steaks with salt and pepper. Grill for 5 minutes per side for medium-rare. Let rest for 10 minutes. Thinly slice steaks across the grain.
